Ingredients & steps
StandardIngredients
- 4 tbsp (1/2 stick) unsalted butter
- 1 cup packed brown sugar
- 3/4 cup water, warmed
- 1 tsp pecan extract or butter pecan extract/flavoring
- 1/4 tsp fine sea salt
Steps
- 1.Melt the butter in a small saucepan over medium heat, then keep cooking, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasty and nutty (real browned butter, sometimes called beurre noisette) -- watch closely near the end, it goes from browned to burnt fast.
- 2.Add the brown sugar to the browned butter and stir to combine -- it will clump and look grainy at first, that's normal. Cook, stirring, for 1-2 minutes.
- 3.Remove from heat and carefully whisk in the warm water a little at a time -- it will bubble up. If any sugar hardens into clumps, return to low heat for a minute, stirring until smooth.
- 4.Stir in the pecan extract and salt. Let cool completely -- the butter may separate slightly as it cools; a good stir or shake brings it back together.
- 5.Store in a sealed jar in the fridge for up to 1 week (shorter than the site's other syrups, since this one has real butter in it). Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. This is the syrup batch behind our Butter Pecan Latte — real browned butter and brown sugar, the same technique as our Brown Butter Toffee Syrup, finished with pecan extract instead of vanilla. It’s a genuinely different flavor family from our Maple Pecan recipes, which build on maple syrup instead of browned butter — “butter pecan” and “maple pecan” are related but distinct café flavors, and this site now has a dedicated jar for each.
How This Differs From Maple Pecan
Our existing Maple Pecan family uses real maple syrup as its base (maple is the flavor there, so even the Standard tier skips cane sugar). Butter pecan is a different flavor built around browned butter and toasted nuts rather than maple — so this syrup follows the same real-butter technique as our Brown Butter Toffee Syrup instead, with pecan extract for the nut character. This Standard version leans on bottled pecan extract for speed; the Ingredient-Honest version steeps real toasted pecans into the syrup instead.
The Syrup
Melt 4 tbsp unsalted butter in a small saucepan over medium heat, then keep cooking it, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasted and nutty — watch it closely toward the end, since browned butter can go to burnt butter in under a minute. Add 1 cup packed brown sugar and stir it in (it clumps and looks grainy at first, that’s expected), cooking for another 1-2 minutes. Off the heat, carefully whisk in 3/4 cup warm water a little at a time — it bubbles up, so add it slowly. Finish with 1 tsp pecan extract and 1/4 tsp salt, then let it cool completely — the butter can separate slightly as it cools, which a quick shake fixes.
Store the finished syrup in a sealed jar in the fridge for up to 1 week (shorter than most syrups on this site, since it contains real butter). It makes roughly 8 drinks’ worth at 2 tbsp per serving.
Assumptions: unsalted butter at typical grocery pricing (~$4.50/lb, ~$0.14/tbsp, same figure our Brown Butter Toffee Syrup uses), brown sugar at typical grocery pricing (~$0.45/cup), and pecan/butter pecan extract at typical specialty-extract pricing (a standard 2 fl oz grocery bottle, ~$7, ~$0.58/tsp — the same rate as our hazelnut extract).
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — shorter than the site’s other syrups, because this one contains real butter/dairy.
- Give it a shake or stir before every use, not just the first — the butter can separate as it sits.
- Double the batch if you go through butter pecan lattes quickly, but consider making it more often instead given the shorter shelf life.
Swaps & Notes
- Watching the browning closely is the whole recipe. Go by smell and color, not a timer — the second it smells toasty and turns the color of a paper grocery bag, pull it off the heat before adding the sugar.
- Can’t find pecan extract specifically? Butter pecan extract/flavoring (sold near vanilla and other baking flavorings) works just as well and is often easier to find.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Butter Pecan Latte. If you want the same drink with less or no added sugar, the Sugar-Free Butter Pecan Syrup swaps in a sugar-free brown sugar substitute. If you’d rather skip bottled extract entirely, the Maple Butter Pecan Syrup behind our Ingredient-Honest tier steeps real toasted pecans into real maple syrup instead. Combined 1 tbsp each with Buttered Toffee Syrup, it’s the Toffee Pecan Latte; with Caramel Syrup, it’s the Caramel Pecan Latte; with Toasted Coconut Syrup, it’s the Coconut Pecan Latte; with Gingerbread Syrup, it’s the Gingerbread Pecan Latte.

FAQ
Is this the same as your Maple Pecan Syrup?
No — genuinely different technique and flavor. Maple Pecan is built on real maple syrup as its base (maple is the flavor there); this syrup is built on real browned butter and brown sugar, the classic “butter pecan” profile, with pecan extract carrying the nut character. Related flavors, different jars.
Why does this only keep a week instead of two?
Real butter is a dairy fat, and dairy-containing mixtures don’t hold up in the fridge as long as a plain sugar or maple syrup does. A week in a sealed jar is the safe window, same as our Brown Butter Toffee Syrup.
Do I need to make this every time I want a latte?
No — one batch covers about 8 drinks. The Butter Pecan Latte recipe assumes you already have a jar of this on hand.
