    Coconut Chai Syrup

    The BYOB Team25 min1 batch (about 10 servings, 2 tbsp each)~$0.21/serving (~$2.07 per batch, makes ~10 servings)117 cal/serving

    Ingredients & steps

    Standard

    Ingredients

    • 1 can (13.5oz) full-fat coconut milk
    • 1/2 cup packed brown sugar
    • 1 cinnamon stick
    • 6 whole cardamom pods, lightly crushed
    • 4 whole cloves
    • 3-4 slices fresh ginger
    • 1/4 tsp whole black peppercorns

    Steps

    1. 1.Combine the coconut milk, brown sugar, cinnamon stick, cardamom, cloves, ginger, and peppercorns in a small saucepan over medium heat, stirring until the sugar dissolves.
    2. 2.Bring to a gentle simmer and cook, stirring occasionally, for 15-18 minutes, until reduced slightly and fragrant -- coconut milk can scorch if left unstirred for long stretches, so check it every few minutes.
    3. 3.Remove from heat and strain out the whole spices through a fine-mesh strainer.
    4. 4.Let cool completely -- it thickens more than a plain sugar syrup as it cools, since coconut milk's fat content firms up when cold.
    5. 5.Store in a sealed jar in the fridge for up to 1 week. Give it a stir or a few seconds in a warm water bath before using (the coconut fat can separate and solidify slightly in the cold). Use 2 tbsp per drink, swirled into warm Chai Concentrate.

This is the syrup behind our Harvest Spiced Chai — real full-fat coconut milk, simmered down with brown sugar and whole chai spices, built to swirl into a brewed chai base rather than replace the tea itself.

Why This Isn’t a Dairy-Free Version of the Chai Concentrate

Our Chai Concentrate is water steeped with black tea and ground spices — a thin, tea-forward liquid that carries the caffeine in this drink family. This syrup has no tea in it at all. It’s full-fat coconut milk reduced with whole spices, a genuinely different technique (a dairy-adjacent fat reduction, not a tea infusion) that delivers a richer, creamier mouthfeel the concentrate alone doesn’t have. That’s also why our Harvest Spiced Chai uses both: the Chai Concentrate for the tea backbone and caffeine, this syrup swirled in on top for the coconut-spice richness.

    The Syrup

Combine 1 can full-fat coconut milk, 1/2 cup packed brown sugar, a cinnamon stick, 6 lightly crushed cardamom pods, 4 whole cloves, a few slices of fresh ginger, and 1/4 tsp whole peppercorns in a saucepan over medium heat. Simmer gently for 15-18 minutes, stirring every few minutes so the coconut milk doesn’t scorch, until fragrant and slightly reduced. Strain out the whole spices and let cool completely — it firms up more than a plain syrup as the coconut fat chills.

Batch Cost vs. Store-Bought Coconutmilk Chai Syrup
    This batch (10 servings)$2.07 total
    Per 2 tbsp serving~$0.21
Typical bottled coconutmilk chai syrup, per 2 tbsp serving$0.60-$0.80

Assumptions: full-fat canned coconut milk at typical grocery pricing (~$1.69/13.5oz can), brown sugar at this site’s $0.45/cup baseline, whole pantry spices at the same low cost our Chai-Spiced Apple Cider Latte’s syrup assumes. This runs pricier per serving than our plain Chai Concentrate, since real coconut milk costs more than water and tea bags — an honest tradeoff for the richer result.

    Storage & Shelf Life

    • Keeps about 1 week in a sealed jar in the fridge — shorter than our plain sugar syrups, since coconut milk is a real fat-containing dairy-adjacent ingredient, not shelf-stable sugar water.
    • The coconut fat firms up and can separate slightly in the cold. A stir or a few seconds in a warm water bath brings it back to pourable.
    • Double the batch if you go through these quickly, but plan around the 1-week window.

    Swaps & Notes

    • No whole spices on hand? A pre-mixed chai spice blend (about 2 tsp) works as a substitute, same swap our Chai Concentrate suggests.
    • Light coconut milk instead of full-fat? It’ll work, but thinner and less rich — full-fat is what gives this its creamy point of difference from the plain concentrate.

    What to Make With This

2 tbsp of this syrup, swirled into warm Chai Concentrate, is the coconut-spice layer behind our Harvest Spiced Chai.

    FAQ

Is this the same as your Chai Concentrate?

No — the Chai Concentrate is water steeped with black tea and ground spices, no coconut or dairy involved. This syrup has no tea at all; it’s coconut milk reduced with whole spices, meant to be swirled into the concentrate rather than replace it.

Why does this keep for only a week?

It’s a real coconut-milk reduction, not shelf-stable sugar syrup — fat-containing bases like this don’t hold up in the fridge as long as a plain sugar-water syrup does.

Can I use this in a regular Chai Latte instead of Harvest Spiced Chai?

Yes — swap it in for part of the sweetener in our Chai Latte for a coconut-forward variation, though the recipe as written doesn’t include the Marshmallow Cold Foam or cinnamon-sugar topping that make Harvest Spiced Chai its own drink.
