Same drink, three ways. Ingredient-Honest is our top recommendation -- Standard and Sugar-Free are the other options.

    Ingredients & steps

    Sugar-Free

    Ingredients

    • 4 tbsp (1/2 stick) unsalted butter
    • 1 cup sugar-free brown sugar substitute (e.g. Lakanto Golden or Swerve Brown)
    • 3/4 cup water, warmed
    • 1 tsp pecan extract or butter pecan extract/flavoring
    • 1/4 tsp fine sea salt

    Steps

    1. 1.Melt the butter in a small saucepan over medium heat, then keep cooking, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasty and nutty -- watch closely near the end, it goes from browned to burnt fast.
    2. 2.Add the sugar-free brown sugar substitute to the browned butter and stir to combine -- some sugar-free brown sugar blends dissolve a little differently than real brown sugar, so expect slightly more clumping at first.
    3. 3.Remove from heat and carefully whisk in the warm water a little at a time -- it will bubble up. If any sweetener hardens into clumps, return to low heat for a minute, stirring until smooth.
    4. 4.Stir in the pecan extract and salt. Let cool completely -- the butter may separate slightly as it cools; a good stir or shake brings it back together.
    5. 5.Store in a sealed jar in the fridge for up to 1 week (real butter, same shorter shelf life as the Standard syrup). Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. This is the sugar-free half of our Butter Pecan Syrup family — real browned butter, same technique as the Standard version, with a sugar-free brown sugar substitute standing in for packed brown sugar.

    The Syrup

Melt 4 tbsp unsalted butter in a small saucepan over medium heat and cook, swirling often, for 3-5 minutes until golden-brown and toasty-smelling. Add 1 cup sugar-free brown sugar substitute and stir it in — some blends clump a bit more than real brown sugar at this stage, which is normal. Off the heat, whisk in 3/4 cup warm water a little at a time, then stir in 1 tsp pecan extract and 1/4 tsp salt. Let cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 1 week. It makes roughly 8 drinks’ worth at 2 tbsp per serving.

    Batch Cost, Sugar-Free Version
    This batch (8 servings)$4.92 total
    Per 2 tbsp serving~$0.62

Assumptions: unsalted butter at typical grocery pricing (~$0.14/tbsp), a sugar-free brown sugar substitute at typical specialty pricing (~$8-9 for a 16oz bag, which runs noticeably pricier per cup than real brown sugar or plain granulated allulose), and pecan extract at typical specialty-extract pricing (~$0.58/tsp). The brown sugar substitute is the main reason this syrup costs more per serving than most other Sugar-Free syrups on the site.

    Storage & Shelf Life

    • Keeps about 1 week in a sealed jar in the fridge — real butter, same shorter window as the Standard syrup.
    • Give it a shake or stir before every use — the butter can separate as it sits.

    Swaps & Notes

    • No sugar-free brown sugar substitute on hand? Granulated allulose plus a teaspoon of blackstrap molasses gets you a similar brown-sugar depth, though it’s not a precise substitute.
    • This isn’t a zero-calorie syrup. Real butter still carries real fat calories even though the sweetener doesn’t — 52 cal/serving is a real reduction from the Standard syrup’s 156, but not zero.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding milk, is the Sugar-Free Butter Pecan Latte. If sugar isn’t your main concern, the Butter Pecan Syrup uses real brown sugar, or the Maple Butter Pecan Syrup behind our Ingredient-Honest tier steeps in real toasted pecans and maple syrup instead.

    FAQ

    Is this actually calorie-free?

No — real butter carries real fat calories regardless of the sweetener. This syrup cuts calories roughly two-thirds versus the Standard version (52 vs. 156 per serving) by removing the sugar, but it isn’t a zero-calorie recipe.

Why does this cost more than most sugar-free syrups on the site?

Sugar-free brown sugar substitutes cost noticeably more per cup than plain granulated allulose or monk fruit blends, and real butter adds to that. It’s still cheaper than a bottled café syrup.

Do I need to make this every time I want a latte?

No — one batch covers about 8 drinks. The Sugar-Free Butter Pecan Latte recipe assumes you already have a jar on hand.
