    Ingredients & steps

    Standard

    Ingredients

    • 1 cup water
    • 1 cup packed brown sugar
    • 1 tsp toffee or butterscotch extract
    • 1/4 tsp fine sea salt

    Steps

    1. 1.Combine the water and brown sugar in a small saucepan over medium heat, stirring until the sugar fully dissolves.
    2. 2.Bring to a gentle simmer and cook for 2-3 minutes -- there's nothing to reduce here, just make sure it's fully dissolved.
    3. 3.Remove from heat and stir in the toffee/butterscotch extract and salt -- the salt is what pushes this toward a real 'toffee' character instead of tasting like plain sweetened brown sugar. Let cool completely.
    4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. This is the syrup batch behind our Buttered Toffee Latte — pulled out into its own recipe so you can make it once and go straight to assembling drinks for the next couple of weeks.

    Buttered Toffee Isn’t Caramel

It’s worth saying plainly, since the two get confused: our Caramel Syrup is browned white cane sugar. This one starts from brown sugar (which already carries a molasses note caramel doesn’t) and adds a real butterscotch/toffee extract plus a pinch of salt, instead of caramelizing sugar on the stovetop. Same “sweet dessert flavor in a latte” category, but a distinctly different flavor profile — closer to a butterscotch candy or English toffee than a browned-sugar caramel.

    The Syrup

Combine 1 cup water and 1 cup packed brown sugar in a small saucepan over medium heat, stirring until the sugar dissolves. Bring it to a gentle simmer for 2-3 minutes — there’s no reduction step here, just full dissolving. Off the heat, stir in 1 tsp toffee or butterscotch extract and 1/4 tsp salt — the salt is doing real work here, rounding the sweetness into something that reads as “toffee” instead of just sweetened brown sugar water. Let it cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

    Batch Cost vs. Store-Bought Syrup
    This batch (12 servings)$1.05 total
    Per 2 tbsp serving~$0.09
Typical store-bought pump bottle, per serving$0.35-$0.45

Assumptions: brown sugar at typical grocery pricing (~$0.45/cup, the same baseline every syrup on this site uses) and toffee/butterscotch extract at typical specialty-extract pricing — like hazelnut, it isn’t sold in Costco-bulk sizes the way vanilla is, so a standard 2 fl oz grocery bottle (~$7, ~$0.60/tsp) is the realistic source; a store-bought comparison assumes a ~750ml pump bottle of buttered toffee syrup around $9-11, yielding about 25 servings at 2 tbsp each.

    Storage & Shelf Life

    • Keeps about 2 weeks in a sealed jar in the fridge.
    • Double the batch if you go through buttered toffee lattes quickly — everything scales evenly (2 cups water, 2 cups brown sugar, 2 tsp extract, 1/2 tsp salt).
    • Give it a shake or stir before using; brown sugar can settle slightly at the bottom of the jar.

    Swaps & Notes

    • No toffee/butterscotch extract on hand? A butter extract plus a splash more brown sugar gets you close, though the flavor reads slightly less “toffee” and more generically buttery.
    • Want it saltier, closer to a salted-toffee candy? Double the salt to 1/2 tsp — same move our Caramel Syrup recommends for a salted-caramel version.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Buttered Toffee Latte. If you want the same drink with less or no sugar, the Sugar-Free Buttered Toffee Syrup swaps the sweetener with the same method. If you’d rather avoid artificial butterscotch flavoring, the Brown Butter Toffee Syrup behind our Ingredient-Honest tier uses real browned butter instead of extract. Combined 1 tbsp each with Butter Pecan Syrup, it’s the Toffee Pecan Latte; with Banana Bread Syrup, it’s the Banoffee Latte; with Toasted Coconut Syrup, it’s the Toasted Coconut Toffee Latte; with Irish Cream Syrup, it’s the Irish Cream Toffee Latte.

    FAQ

How is “buttered toffee” different from caramel or hazelnut?

Caramel is browned white sugar; hazelnut is a nut-forward extract flavor. Buttered toffee sits between them — a brown-sugar, butterscotch-leaning flavor with a salt-forward finish, closer to an English toffee candy than either of the other two.

Do I need to make this every time I want a latte?

No — that’s the point of splitting this out. Make one batch and it covers about 12 drinks; the Buttered Toffee Latte recipe assumes you already have a jar of this on hand.

    Can I skip the salt?

You can, but it changes the flavor more than you’d expect — without it, this syrup tastes like sweetened brown sugar rather than “toffee.” The pinch is doing real flavor work, not just balancing sweetness.
