Ingredients & steps
Ingredient-HonestIngredients
- 1/3 cup raw pecans, roughly chopped
- 4 tbsp (1/2 stick) unsalted butter
- 1 cup pure maple syrup
- 1/4 tsp fine sea salt
Steps
- 1.Toast the chopped pecans in a dry skillet over medium heat for 3-4 minutes, stirring often, until fragrant and a shade darker -- watch closely, nuts go from toasted to burnt fast. Set aside.
- 2.In a small saucepan, melt the butter over medium heat and keep cooking, swirling often, for 3-5 minutes until it turns golden-brown and smells nutty.
- 3.Add the maple syrup and toasted pecans to the browned butter and warm gently over low heat for 5 minutes, stirring occasionally, to let the pecan flavor infuse into the syrup.
- 4.Remove from heat and strain out the pecan pieces through a fine-mesh strainer (save them -- they're good on oatmeal or yogurt). Stir the salt into the strained syrup. Let cool completely.
- 5.Store in a sealed jar in the fridge for up to 1 week (real butter, same shorter shelf life as our other browned-butter recipes). Use 2 tbsp per drink, stirred into hot espresso before adding milk.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.
This is the from-scratch version of our Butter Pecan Syrup family — real toasted pecans steeped into real browned butter and real maple syrup, then strained, instead of leaning on a bottled pecan extract. It’s the most authentic and most labor-intensive of the three tiers, and it’s also, notably, the richest in flavor and calories.
What “Ingredient-Honest” Means Here
Our Standard and Sugar-Free Butter Pecan syrups both use bottled pecan extract for speed and consistency — a completely reasonable shortcut, but a shortcut. This version skips it: real pecans, toasted in a dry pan until fragrant, steeped directly in the browned butter and maple syrup, then strained out. What you get in the jar is the actual flavor of toasted pecans and browned butter, not an approximation of it. It’s also worth being upfront that, like our other maple-based Ingredient-Honest syrups, this isn’t a lower-calorie or lower-sugar version — real maple syrup and real butter both carry real calories, and this is in fact the highest-calorie of the three butter pecan tiers.
The Syrup
Toast 1/3 cup roughly chopped raw pecans in a dry skillet over medium heat for 3-4 minutes, stirring often, until fragrant — pull them the moment they smell toasty, since nuts scorch fast. Set them aside. In a small saucepan, brown 4 tbsp unsalted butter over medium heat for 3-5 minutes until golden and nutty-smelling. Add 1 cup maple syrup and the toasted pecans to the browned butter and warm gently over low heat for 5 minutes so the pecan flavor infuses into the syrup. Off the heat, strain out the pecan solids through a fine-mesh strainer (they’re not wasted — save them for oatmeal or yogurt), then stir 1/4 tsp salt into the strained syrup and let it cool completely.
Store the finished syrup in a sealed jar in the fridge for up to 1 week. It makes roughly 9 drinks’ worth at 2 tbsp per serving.
Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle), unsalted butter at typical grocery pricing (~$4.50/lb), and raw pecans at typical grocery pricing (~$9-10/lb, so 1/3 cup chopped runs about $0.75). Maple syrup and real pecans together make this the most expensive of the three butter pecan tiers, same pattern as our other maple-based Ingredient-Honest syrups.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — real butter, same shorter window as our other browned-butter recipes.
- Give it a shake or stir before every use — the butter can separate as it sits.
- Save the strained pecan pieces — they’ve absorbed real maple-butter flavor and are genuinely good spooned over oatmeal, yogurt, or toast instead of thrown out.
Swaps & Notes
- Short on time? Skip the straining step and leave the toasted pecan bits in the syrup for texture — just be ready to stir a few small pecan pieces into your drink along with the syrup.
- This is not a lower-calorie tier. At 164 calories per 2 tbsp serving, it’s the richest of the three butter pecan syrups — real butter, real maple syrup, and real pecans all carry real calories. If calories or added sugar are the priority, see the Sugar-Free Butter Pecan Syrup instead.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Ingredient-Honest Butter Pecan Latte — our top-recommended butter pecan tier. If cost and shelf life matter more than real toasted nuts, the Butter Pecan Syrup uses bottled pecan extract instead. If cutting sugar is the priority, see the Sugar-Free Butter Pecan Syrup.

FAQ
Is this actually lower in sugar or calories than the Standard syrup?
No — it’s the opposite. Real maple syrup and real toasted pecans both add calories, so this is the highest-calorie of the three butter pecan tiers, not the lowest. The upgrade here is avoiding bottled extract in favor of real, whole ingredients, not a nutrition win.
Do I have to strain out the pecans?
No, but it keeps the syrup pourable through a spoon or pump. If you don’t mind small pecan bits in your drink, you can skip straining and stir the whole batch, pecans included.
Why is this the most expensive butter pecan tier?
Real maple syrup and real pecans both cost meaningfully more than bottled extract and bulk sugar — the tradeoff for the most authentic version of the flavor.
