Marshmallow Cold Foam
Uses Toasted Marshmallow Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.
Ingredients & steps
StandardIngredients
- 1/3 cup (about 2.7oz) cold heavy cream (36%+ milkfat -- labeled "heavy whipping cream," not just "whipping cream")
- 1 tbsp Toasted Marshmallow Syrup (make a batch ahead of time -- it keeps about 2 weeks in the fridge)
Steps
- 1.Make sure the heavy cream is well-chilled -- straight from the fridge, not sitting out. Cold cream whips faster and holds a more stable foam.
- 2.Combine the cold heavy cream and toasted marshmallow syrup in a tall, narrow jar or cup. If the syrup has firmed up in the fridge (it does -- see the syrup recipe's note on why), give it a few seconds in a warm water bath first so it blends in smoothly.
- 3.Froth with a handheld milk frother for 30-45 seconds, or blend in a blender on high for 15-20 seconds, or seal in a jar and shake vigorously for 45-60 seconds -- stop once it thickens into a pourable, softly mounded foam. This is NOT whipped cream: stop well before it holds stiff peaks.
- 4.Spoon or pour the foam over the top of your own iced coffee, chai, or matcha -- it floats on top rather than mixing in, because it's less dense than the drink underneath.
- 5.Serve immediately for the best texture. It holds its float for 10-15 minutes before starting to settle into the drink.

This is our standard cold foam base technique with real Toasted Marshmallow Syrup whipped in — a topping, not a drink on its own, same role as our Pumpkin, Churro, and other flavored cold foams. It’s what makes our Harvest Spiced Chai and Tiramisu Marshmallow Matcha possible without either recipe reinventing its own one-off marshmallow topping.
Real Marshmallow, Not a Bottled Flavor
The syrup behind this foam is genuinely broiled marshmallow — real mini marshmallows, charred under the broiler until the sugar on the outside blisters, then melted down (see Toasted Marshmallow Syrup for the full method). We checked whether that broiler technique could work directly in the cold foam itself rather than going through the syrup first, but it doesn’t translate: broiled marshmallow needs to fully melt to incorporate, and melted marshmallow folded straight into cold cream seizes into sticky clumps instead of whipping smooth. Going through the syrup — which is already melted, cooled, and pourable — is what lets this actually whip into a foam.
The Technique
Combine 1/3 cup cold heavy cream and 1 tbsp Toasted Marshmallow Syrup in a tall, narrow container, then whip it one of three ways:
- Handheld milk frother wand: 30-45 seconds.
- Blender: 15-20 seconds on high.
- Shake by hand: seal in a jar and shake vigorously for 45-60 seconds.
Stop as soon as it’s thickened into a soft, pourable foam that mounds slightly — past that point it starts turning into stiff whipped cream, which won’t float and pour the same way.
Assumptions: standard grocery-pricing heavy whipping cream (~$4.29/pint) and our own Toasted Marshmallow Syrup batch cost. As with our other cold foam toppings, the real savings case is pairing this with a home-brewed base rather than a café drink entirely — see the Harvest Spiced Chai and Tiramisu Marshmallow Matcha for the full drink-level math.
Real Stability Notes
- Cold cream whips faster and holds better than room-temperature cream.
- If the syrup has firmed up in the jar (it does — real marshmallow contains gelatin, see the syrup recipe), loosen it in a warm water bath before combining, or it won’t whip in evenly.
- Best made fresh — holds its floating layer about 10-15 minutes before settling in.
- Don’t over-whip past the soft-foam stage, or it turns into whipped cream and eventually butter.
Swaps & Notes
- Only have half-and-half? It’ll froth thinner and less stable than heavy cream’s 36%+ fat content.
- Prefer a different flavor? See our Pumpkin, Churro, Coconut, Vanilla Sweet Cream, or Salted Caramel Cold Foam — same base technique, different syrup.

FAQ
Does this use the same syrup as the Toasted Marshmallow Cream Cold Brew?
Yes — same Toasted Marshmallow Syrup, whipped into heavy cream here instead of stirred through with milk the way the cold brew recipe does it. One batch of syrup covers both uses.
Can I use this on any drink, or only the two it’s built for?
Any iced coffee, chai, or matcha you already have — it’s not tied to one specific base drink, same as our other cold foam toppings.
Why not just toast fresh marshmallows directly into the foam instead of using the syrup?
We tested that first. Broiled marshmallow has to fully melt to incorporate, and melted marshmallow folded straight into cold cream seizes into sticky clumps rather than whipping smooth — going through the already-melted, cooled syrup is what actually works.
