- 1 cup granulated sugar
- 2 tbsp pure vanilla bean paste (not extract -- this is the swap that makes this syrup, see below)
Steps
- 1.Combine the water and sugar in a small saucepan over medium heat, stirring until the sugar fully dissolves.
- 2.Bring to a gentle simmer and cook for 2-3 minutes -- same as our regular Vanilla Syrup, you're just making sure everything's dissolved.
- 3.Remove from heat and stir in the vanilla bean paste. Let cool completely -- vanilla's aroma is volatile, so adding it off-heat keeps more of the flavor in the jar instead of the air above the pan.
- 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Blonde Vanilla Latte — and the one place this recipe differs from our regular Vanilla Syrup on paper. The method is identical (dissolve, simmer briefly, flavor off-heat, cool, store), but the flavoring itself swaps from extract to real vanilla bean paste. The Syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat, stirring until the sugar dissolves. Bring it to a gentle simmer for 2-3 minutes. Off the heat, stir in 2 tbsp pure vanilla bean paste and let it cool completely.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Why Paste Instead of Extract
Our Standard and Sugar-Free Vanilla syrups both use real vanilla extract, with vanilla bean paste offered as an optional add-in for flecks. Here, paste is the whole flavor — not an upgrade sprinkled on top. Two reasons:
- Rounder, cleaner flavor. Extract carries some alcohol sharpness even after cooking, which a bold medium or dark roast can mostly cover up. A light roast doesn’t have that boldness, so the sharpness has nowhere to hide — paste’s flavor is cleaner and doesn’t fight it.
- It’s the actual bean, not a tincture of it. Paste is ground vanilla bean suspended in a thick syrup, so you get more of the bean’s real flavor (and the visible flecks) per tablespoon than extract, which is mostly alcohol carrying the aroma.
Assumptions: sugar and water at the same bulk pricing as our regular Vanilla Syrup (~$0.45 of the batch), plus vanilla bean paste at typical grocery/online pricing — roughly $1.50/tbsp (a 4oz jar, about 16 tbsp, running $22-26 at typical retail). Paste costs more per tablespoon than extract; that’s the honest tradeoff for the cleaner flavor.
Storage & Shelf Life

- Give it a shake or stir before using — vanilla bean flecks settle.
- Double the batch if you go through these quickly — everything scales evenly (2 cups water, 2 cups sugar, 1/4 cup vanilla bean paste).
