    Brown Butter Chocolate Chip Syrup

    The BYOB Team20 min1 batch (about 10 servings, 2 tbsp each)~$0.15/serving (~$1.45 per batch, makes ~10 servings)141 cal/serving

    Ingredients & steps

    Standard

    Ingredients

    • 4 tbsp (1/2 stick) unsalted butter
    • 3/4 cup packed brown sugar
    • 3/4 cup water, warmed
    • 1/3 cup (about 2oz) mini semisweet chocolate chips
    • 1/2 tsp vanilla extract
    • 1/4 tsp fine sea salt

    Steps

    1. 1.Melt the butter in a small saucepan over medium heat, then keep cooking, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasty and nutty (real browned butter, beurre noisette) -- watch closely near the end, it goes from browned to burnt fast.
    2. 2.Add the brown sugar to the browned butter and stir to combine -- it clumps and looks grainy at first, that's normal. Cook, stirring, for 1-2 minutes.
    3. 3.Remove from heat and carefully whisk in the warm water a little at a time -- it will bubble up.
    4. 4.While the mixture is still warm (not off a hard boil, just warm enough to soften chocolate), add the mini chocolate chips and stir gently 2-3 times -- just enough for them to partially melt into streaks and ribbons. Don't stir until they fully dissolve; real chip texture is the point.
    5. 5.Stir in the vanilla extract and salt. Let cool completely -- the chocolate ribbons firm up as it chills, which is normal.
    6. 6.Store in a sealed jar in the fridge for up to 1 week (real butter and chocolate, shorter than our plain sugar syrups). Give it a shake or stir before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Brown Butter Chocolate Chip Latte — real browned butter, the same technique behind our Brown Butter Toffee Syrup, finished with real mini chocolate chips folded in warm so they partially melt rather than fully dissolve.

Why This Isn’t Just the Brown Butter Toffee Syrup With Chips Added

Three real techniques on this site combine here in a way none of our existing flavors do:

    • Vs. our Brown Butter Toffee Syrup: that recipe browns butter alone to a toasty stage, then dissolves brown sugar into it with water — no chocolate anywhere in it. This syrup starts the same way (same beurre noisette browning step) but adds real mini chocolate chips at the end, folded in warm so they partially melt into visible ribbons instead of dissolving completely — a genuinely different final texture and flavor, not a toffee syrup with a garnish on top.
    • Vs. our Mocha Sauce: Mocha Sauce is cocoa powder, fully dissolved into a sugar syrup — smooth and uniform, no chip texture at all. This syrup’s chocolate stays as partially-melted chip fragments on purpose, which is what gives the finished latte real “chocolate chip” bite instead of a uniform mocha flavor.

    The Syrup

Melt 4 tbsp butter in a small saucepan over medium heat, then keep cooking it, swirling the pan often, for 3-5 minutes until it turns golden-brown and smells toasted and nutty — watch it closely toward the end. Add 3/4 cup packed brown sugar and stir it in, cooking 1-2 minutes. Off the heat, carefully whisk in 3/4 cup warm water a little at a time. While the mixture is still warm, add 1/3 cup mini chocolate chips and stir just 2-3 times — enough for them to partially melt into ribbons, not fully dissolve. Finish with 1/2 tsp vanilla and 1/4 tsp salt, then cool completely.

    Batch Cost vs. Store-Bought Syrup
    This batch (10 servings)$1.45 total
    Per 2 tbsp serving~$0.15
    Typical store-bought dessert-flavor syrup, per serving$0.45-$0.60

Assumptions: unsalted butter at this site’s $0.14/tbsp rate, brown sugar at the $0.45/cup baseline, mini chocolate chips at the same ~$3/12oz bag rate our Java Chip Frappé uses, Costco-size vanilla extract.

    Storage & Shelf Life

    • Keeps about 1 week in a sealed jar in the fridge — real butter and real chocolate, shorter than our plain sugar syrups.
    • Give it a shake or stir before every use — the butter can separate slightly as it sits.
    • Double the batch if you go through these quickly, but plan around the 1-week window.

    Swaps & Notes

    • Don’t fully dissolve the chips. The whole point of folding them in warm (not hot, not boiling) with just a couple of stirs is leaving real chip texture behind — stirring until smooth turns this back into a mocha-style sauce.
    • Watching sugar? This one’s Standard-tier only right now — a Sugar-Free or Ingredient-Honest version may follow later.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Brown Butter Chocolate Chip Latte.

    FAQ

Is this just your Brown Butter Toffee Syrup with chocolate chips dumped in?

No — it starts with the same browning technique, but the chips are folded in warm and only partially melted on purpose, which Brown Butter Toffee Syrup never does at all (it has no chocolate). That partial-melt step is what gives this syrup real chip texture instead of a smooth toffee flavor.

Why not just stir the chips in fully until they dissolve?

Because then you’d just have a browned-butter mocha sauce, not a chocolate chip flavor — the partially-melted ribbons and small intact chip fragments are the texture this recipe is built around.

    How long does this keep?

About 1 week in a sealed jar in the fridge — real butter and real chocolate don’t hold up as long as a plain sugar syrup.
