Vanilla Sweet Cream Cold Foam
Uses Vanilla Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.
Ingredients & steps
StandardIngredients
- 1/3 cup (about 2.7oz) cold heavy cream (36%+ milkfat -- labeled "heavy whipping cream," not just "whipping cream")
- 1 tbsp Vanilla Syrup (make a batch ahead of time -- it keeps about 2 weeks in the fridge)
Steps
- 1.Make sure the heavy cream is well-chilled -- straight from the fridge. Cold cream whips faster and holds a more stable foam.
- 2.Combine the cold heavy cream and vanilla syrup in a tall, narrow jar or cup.
- 3.Froth with a handheld milk frother for 30-45 seconds, or blend in a blender on high for 15-20 seconds, or seal in a jar and shake vigorously for 45-60 seconds -- stop once it thickens into a pourable, softly mounded foam. This is NOT whipped cream: stop well before it holds stiff peaks.
- 4.Spoon or pour the foam over the top of your own iced coffee, cold brew, or latte -- it floats on top rather than mixing in, because it's less dense than the drink underneath.
- 5.Serve immediately for the best texture. It holds its float for 10-15 minutes before starting to settle into the drink.

This is the plainest, most versatile version of our cold foam toppings — vanilla sweet cream, the flavor that shows up under nearly every chain’s “cold foam” add-on. It’s a topping, not a drink on its own: spoon or pour it over a coffee, cold brew, or latte you’ve already made.
The Technique
Combine 1/3 cup cold heavy cream and 1 tbsp Vanilla Syrup in a tall, narrow container, then whip it one of three ways:
- Handheld milk frother wand: 30-45 seconds.
- Blender: 15-20 seconds on high.
- Shake by hand: seal in a jar and shake vigorously for 45-60 seconds.
Stop as soon as it’s thickened into a soft, pourable foam that mounds slightly — if it starts holding stiff peaks like whipped cream, you’ve gone past the point you want.
Assumptions: standard grocery-pricing heavy whipping cream (~$4.29/pint) and our own Vanilla Syrup batch cost. As with our other cold foam toppings, this is a smaller savings gap than a full drink shows — the real case for making this at home is pairing it with a home-brewed coffee base, not the topping alone.
Real Stability Notes
- Cold cream whips faster and holds better than room-temperature cream. Chill it, and chill your container/whisk attachment if you’re using a blender or stand mixer.
- This is best made fresh. It holds a floating foam layer for about 10-15 minutes on top of an iced drink before it starts to settle and blend in.
- Leftover foam keeps a few hours in the fridge but will deflate — re-whip for 10-15 seconds before using again.
- Don’t over-whip. Past the soft-foam stage, this mixture keeps going toward stiff whipped cream and eventually butter.
Swaps & Notes
- Only have half-and-half? It’ll froth, but thinner and less stable than heavy cream’s 36%+ fat content — expect it to settle back into the drink faster.
- Want a rounder, “bakery” vanilla flavor? Use the vanilla-bean-paste variant of our Vanilla Syrup, if you made that version — the flecks show nicely suspended in the foam.
- Prefer a different flavor? See our Pumpkin, Salted Caramel, or Coconut Cold Foam — same base technique, different syrup.
- Looking for the viral Starbucks-style hazelnut caramel order? See our Hazelnut Caramel Latte, which floats a batch of this cold foam on top of an iced hazelnut-caramel latte, matching that real custom order.
- Want to batch a topping ahead for the whole week instead of whipping fresh each time? This recipe isn’t built for that — it deflates within hours. See Make-Ahead Vanilla Sweet Cream instead, a diluted, further-whipped version built specifically to hold 5-7 days in the fridge.

FAQ
Is this the same as “sweet cream” some chains add to cold brew?
Very close — most chains’ sweet cream is unwhipped (just cream and a sweetener, poured in and mixed), while this is whipped into a foam so it floats on top instead of blending straight through. Skip the whipping step if you want the poured, unwhipped version instead.
Can I make this without any special equipment?
Yes — a sealed jar shaken vigorously by hand for about a minute works, no frother or blender required, per the technique above.
How long does the foam actually hold its shape on top of a drink?
About 10-15 minutes before it starts settling into the drink below. That’s normal for real cold foam, café-made or homemade — it’s not designed to sit indefinitely.
