Steps
- 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
- 2.Bring to a gentle simmer and cook for 2-3 minutes.
- 3.Remove from heat and stir in the vanilla bean paste. Let cool completely.
- 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot light-roast espresso before adding milk.

The Syrup
Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — this can take a little longer than plain sugar. Bring to a gentle simmer for 2-3 minutes. Off the heat, stir in 2 tbsp pure vanilla bean paste and let it cool completely.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
