Ingredients

  • 1 cup unsweetened coconut flakes
  • 1 cup water
  • 1 cup granulated monk fruit or allulose sweetener
  • Optional: 1/4 tsp coconut extract, for extra intensity

Steps

  1. 1.Toast the coconut flakes in a dry skillet over medium heat, stirring or tossing constantly, until golden brown and fragrant, about 3-5 minutes -- watch closely, coconut goes from toasted to burnt in under a minute once it starts browning.
  2. 2.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly. Bring to a gentle simmer.
  3. 3.Remove from heat and stir in the toasted coconut flakes. Cover and let steep for 20 minutes.
  4. 4.Strain through a fine-mesh strainer into a jar, pressing on the solids to extract as much liquid as possible. Stir in the coconut extract now if using.
  5. 5.Let cool completely, then store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Sugar-Free Toasted Coconut Latte — the same toast-and-steep method as our Standard toasted coconut syrup, with a monk fruit or allulose sweetener standing in for cane sugar. The toasting step does the same job it does in the Standard version: real, deep coconut flavor instead of the thin, slightly artificial edge coconut extract carries on its own.

Not the same drink as our Ube Coconut Cold Brew. That recipe uses coconut milk alongside ube (purple yam) extract in a layered cold brew. This syrup is plain toasted coconut as the main flavor, sugar-free, and works in any hot or iced latte.

The Syrup

Toast 1 cup unsweetened coconut flakes in a dry skillet over medium heat, stirring constantly, until golden brown and fragrant, about 3-5 minutes. Meanwhile, combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — sugar-free sweeteners can take a little longer than plain sugar, so don’t rush this step. Bring to a gentle simmer, then remove from heat and stir in the toasted coconut flakes. Cover and let steep for 20 minutes, then strain through a fine-mesh strainer, pressing on the solids to get all the liquid out. Stir in the optional coconut extract if using, and let cool completely.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
  • Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does — gently reheat the jar in a warm water bath to re-dissolve before using.
  • Give it a shake before using — a little coconut oil can separate and rise to the top; that’s normal.

Sweetener Notes

  • Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here — the easiest substitution if this is your first sugar-free syrup.
  • Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste, since stevia can read as slightly bitter at higher concentrations, and that bitterness can clash with the toasted-coconut flavor more than it does with a plain vanilla syrup.

Does monk fruit or allulose change the toasted coconut flavor?

Slightly — both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The toasted coconut flavor is still the dominant note, since it comes from real toasting rather than the sweetener.
