Same drink, three ways. Ingredient-Honest is our top recommendation -- Standard and Sugar-Free are the other options.

    Ingredients & steps

    Sugar-Free

    Ingredients

    • 1 cup water
    • 1 cup granulated monk fruit or allulose sweetener
    • 1 tsp vanilla extract
    • 1/2 tsp almond extract
    • 1/4 tsp butter extract or butter flavoring
    • Pinch of fine sea salt

    Steps

    1. 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
    2. 2.Bring to a gentle simmer and cook for 2-3 minutes.
    3. 3.Remove from heat and stir in the vanilla, almond, and butter extracts, plus the salt.
    4. 4.Let cool completely. Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

This is the sugar-free half of our Birthday Cake Syrup family — the same vanilla-almond-butter extract blend, with a monk fruit or allulose sweetener standing in for cane sugar.

    The Syrup

Combine 1 cup water and 1 cup monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves. Bring to a gentle simmer for 2-3 minutes. Off the heat, stir in 1 tsp vanilla extract, 1/2 tsp almond extract, 1/4 tsp butter extract, and a pinch of salt. Let cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

    Batch Cost, Sugar-Free Version
    This batch (12 servings)$3.55 total
    Per 2 tbsp serving~$0.30

Assumptions: monk fruit/allulose sweetener at typical grocery pricing (~$3/cup at bulk-bag pricing); vanilla, almond, and butter extract at the same typical specialty-extract pricing as the Standard syrup.

    Storage & Shelf Life

    • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
    • Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does — a warm water bath re-dissolves it.

    Swaps & Notes

    • This syrup itself is essentially calorie-free, but a note worth reading on the Sugar-Free Birthday Cake Latte page: the classic sprinkle garnish does carry a small amount of real sugar, so it’s treated there as optional if you want the drink fully sugar-free.
    • Monk fruit or allulose blends measure roughly cup-for-cup like sugar, the easiest substitution if this is your first sugar-free syrup.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding milk, is the Sugar-Free Birthday Cake Latte. If sugar isn’t your main concern, the Birthday Cake Syrup uses real sugar, or the Maple Birthday Cake Syrup behind our Ingredient-Honest tier uses real maple syrup instead.

    FAQ

    Is this syrup completely sugar-free?

The syrup itself, yes — monk fruit/allulose carries no sugar. If you also add the classic sprinkle garnish at the drink stage, that adds back a small trace of real sugar, which the Sugar-Free Birthday Cake Latte notes honestly and treats as optional.

Do I need to make this every time I want a latte?

No — make one batch and it covers about 12 drinks. The Sugar-Free Birthday Cake Latte recipe assumes you already have a jar on hand.

Does monk fruit or allulose change the taste?

Slightly — both are close to neutral-sweet. The vanilla, almond, and butter extracts are still the dominant flavors either way.
