  • 3/4 cup pure maple syrup
  • 2 whole vanilla bean pods, split lengthwise and seeds scraped (pods reserved, see below)

Steps

  1. 1.Split each vanilla bean pod lengthwise with a paring knife and scrape out the seeds with the flat of the blade.
  2. 2.Whisk the scraped seeds into the maple syrup in a small bowl or jar until evenly distributed -- no cooking required, maple syrup is already a thin, pourable liquid.
  3. 3.Optional: drop the scraped-out pods into the jar too. They'll keep infusing flavor into the syrup as it sits -- fish them out before using if you'd rather not see them.
  4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot light-roast espresso before adding milk.

This is the syrup behind our Clean-Ingredient Blonde Vanilla Latte – real maple syrup in place of the cane-sugar syrup our Standard tier uses, and a real scraped vanilla bean in place of the paste both the Standard and Sugar-Free Blonde syrups use. There’s no stovetop step at all: maple syrup is already a thin, pourable liquid, so this is a 2-minute whisk, not a simmer.

What “Clean-Ingredient” Means Here

Two ingredients you could read off the label without a dictionary: maple syrup and vanilla bean. Our Standard and Sugar-Free Blonde syrups already upgraded from extract to vanilla bean paste for a cleaner flavor against the light roast – this tier goes one step further and skips the paste’s syrup-thickener base entirely, scraping a real whole bean straight into the maple instead. No water, no dissolved granulated sugar, no gums, nothing manufactured standing between you and the actual plant.

Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle, same figure our regular Vanilla-Maple Syrup uses – $4.20 for the 3/4 cup this recipe calls for) plus whole vanilla bean pods at typical grocery pricing ($4/pod; a 2-pack often runs $8-10 at a grocery specialty aisle, cheaper if you buy online in bulk). The vanilla beans are the bigger line item here – a real bean costs meaningfully more than paste or extract, which is the honest tradeoff behind this tier’s price. Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard and Sugar-Free Blonde syrups.
  • Give it a shake before using – vanilla bean seeds settle, more so here than in the paste-based syrups since there’s no thickener holding them suspended.
  • Double the batch if you go through these quickly – everything scales evenly (1 1/2 cups maple syrup, 4 whole vanilla bean pods).

Swaps & Notes

  • Only have vanilla bean paste? Use 2 tbsp of paste in place of the scraped pods – you’ll get closer to the Standard Blonde syrup’s flavor, still with real maple as the sweetener. That’s a reasonable middle ground, just not the fully whole-food version this recipe is built around.
  • This isn’t a lower-calorie swap. Maple syrup runs about the same calories per tablespoon as table sugar – the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free Blonde Vanilla Syrup instead.
  • Vanilla beans pricier than you expected? Buying them online in bulk (a jar of 10+ pods) runs meaningfully cheaper per pod than a grocery store 2-pack – worth it if this becomes a regular batch.

Why does this make fewer servings than the other Blonde syrups?

The Standard and Sugar-Free versions add 2 tbsp of vanilla bean paste on top of their base, which adds servings’ worth of liquid volume. This recipe skips paste and extract entirely – scraped vanilla bean seeds add flavor but almost no volume, so the batch is just the 3/4 cup of maple syrup, divided fewer ways.

Is this lower in sugar than the Standard syrup?

Not meaningfully – it’s a similar amount of sugar, just from maple instead of cane. If sugar content specifically is your priority, see the Sugar-Free Blonde Vanilla Syrup instead, which is built to minimize it.
