Uses Sugar-Free Blonde Vanilla Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

Ingredients & steps

Sugar-Free

Written hot. Switch to see the iced version's ingredients and steps.

Ingredients

  • 2oz light-roast ('blonde') espresso (or 1/3 cup strong light-roast drip coffee/moka pot equivalent -- see the Blonde Vanilla Latte for why the roast matters)
  • 8oz milk or unsweetened milk alternative, steamed or frothed
  • 2 tbsp Sugar-Free Blonde Vanilla Syrup (make a batch ahead of time -- it keeps about 2 weeks in the fridge)
  • Optional: sugar-free whipped cream for topping

Steps

  1. 1.Make a batch of Sugar-Free Blonde Vanilla Syrup ahead of time if you haven't already -- it keeps in the fridge for about 2 weeks, so this is a once-every-couple-weeks step, not a per-drink one.
  2. 2.Pull a double shot of light-roast espresso directly into your serving cup (or brew strong light-roast coffee). Light roast beans are denser than medium/dark -- go slightly finer on the grind if your shot runs thin or sour.
  3. 3.Stir in 2 tbsp of the sugar-free syrup while the espresso is hot.
  4. 4.Steam or froth 8oz of milk (dairy or unsweetened alternative) to about 150°F and pour over the espresso-syrup mixture.
  5. 5.Top with sugar-free whipped cream if using. Serve immediately.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

A café-style blonde vanilla latte doesn’t dodge the sugar problem just because the roast is lighter – it’s still built on a regular vanilla syrup. This version keeps the light-roast pairing that makes the Blonde family what it is and drops the added sugar to close to zero.

Make the Syrup First (Just Once)

This recipe assumes you already have a jar of Sugar-Free Blonde Vanilla Syrup in the fridge – the same real vanilla bean paste as our Standard Blonde syrup, with the sweetener swapped to monk fruit/allulose. It’s a 10-minute batch that makes about 12 drinks’ worth and keeps for 2 weeks, so you only need to make it every couple of weeks. If you haven’t made a batch yet, go do that first, then come back here.

Why Light Roast Still Matters Here

Swapping the sweetener doesn’t change the reason this family exists in the first place: a light (“blonde”) roast pairs with vanilla’s delicate sweetness better than the medium/dark roast this site otherwise defaults to, because there’s no bold roast flavor steamrolling it. That’s true whether the syrup behind it carries sugar or not. If you’re new to this family, read why “blonde” isn’t just vanilla again on the Standard recipe – this page assumes you’ve got the roast sorted and just needs you to stir in the sugar-free syrup instead.

Building the Latte

  1. Pull a double shot of light-roast espresso (about 2oz) into your cup, or brew strong light-roast coffee. Go slightly finer on the grind if your first shot or two runs thin or sour – light roast beans are denser than medium/dark.
  2. Stir in 2 tbsp of the sugar-free syrup while the espresso is hot.
  3. Steam or froth 8oz of milk (dairy, or an unsweetened alternative if you’re also watching carbs from milk) and pour over the espresso-syrup mixture.
  4. Top with sugar-free whipped cream if you want the full café look.
Cost and Sugar, Home vs. Café
Home sugar-free blonde vanilla latte~$1.32
Café grande blonde vanilla latte (regular)$6.45
Savings per drink$5.13

Plus you’re skipping the roughly 17g of added sugar the Standard Blonde Vanilla Latte carries.

The syrup batch is a one-time ~$6.00 and makes about 12 drinks – see the full syrup recipe for the batch method and cost breakdown, which comes out to roughly $0.50 per drink in syrup alone (vanilla bean paste costs more than extract, the same tradeoff the Standard Blonde syrup makes).

Assumptions: grande-size drink, national-average café pricing plus the typical upcharge cafés add for a light-roast/“blonde” espresso swap, monk fruit/allulose sweetener at typical grocery pricing (~$3/cup at bulk-bag pricing). Your numbers shift a little with which sweetener brand you use – the gap doesn’t change.

Swaps & Notes

  • No espresso machine? A moka pot or strong AeroPress shot with light-roast beans works fine, same as the Standard version.
  • Want zero syrup-thickener too? See the Clean-Ingredient Blonde Vanilla Latte – real maple and a scraped whole vanilla bean, no sweetener blend at all.
  • Iced version: use the Hot/Iced toggle above – same 4oz-cold-milk-over-ice convention as every other iced recipe on the site.

FAQ

Do I need to make the syrup every time I want this drink?

No – that’s why it’s its own recipe now. One batch keeps about 2 weeks in the fridge and covers roughly 12 drinks, so this page is just the 5-minute assembly step.

Does this still need light-roast beans, or does the sugar-free swap change that?

It still needs light-roast beans – the roast is the actual point of the Blonde family, not the syrup. Made with a medium or dark roast, this becomes a sugar-free version of our regular Vanilla Latte instead.

How much sugar does this actually save me?

The Standard Blonde Vanilla Latte carries roughly 17g of added sugar per drink, all from the syrup. This version has close to zero, depending on which sweetener you use.
