Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.
This is the syrup batch behind our Copycat Pumpkin Spice Latte — pulled out into its own recipe so you can make it once and go straight to assembling drinks for the next two weeks, instead of reading the same syrup steps every time. If you’ve already got a jar of this in the fridge, you don’t need this page again until it runs out.
The Syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat, stirring until the sugar dissolves. Whisk in 1/4 cup canned pumpkin puree, 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp clove, and 1/4 tsp nutmeg, then simmer for 4-5 minutes until it thickens slightly. Off the heat, stir in 1/2 tsp vanilla extract and let it cool. Straining it through a fine-mesh sieve gets you a completely smooth pour, but it’s optional — the texture barely affects the taste.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Assumptions: sugar, a spoonful of canned pumpkin, spices, and vanilla at typical grocery pricing; a store-bought comparison assumes a ~750ml pump bottle of pumpkin syrup around $10-12, yielding about 25 servings at 2 tbsp each. Either way, the homemade batch pays for itself well before you finish the jar.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge. It’s a small batch on purpose — sugar syrups like this don’t need preservatives if you use them up within a couple weeks.
- Double the batch if you go through PSLs quickly — everything scales evenly (2 cups water, 2 cups sugar, 1/2 cup pumpkin, and double the spices).
- Give it a shake or stir before using if the pumpkin settles slightly at the bottom of the jar; that’s normal and doesn’t affect flavor.
Swaps & Notes
- No pumpkin puree on hand? The spice blend alone (cinnamon, ginger, clove, nutmeg) gets you 90% of the flavor — the pumpkin puree mostly adds body and color, not the dominant taste.
- Want it thicker, closer to a bottled syrup? Simmer an extra minute or two past the 4-5 minute mark; it’ll thicken further as it cools.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Copycat Pumpkin Spice Latte. If you want the same drink with less or no sugar, the Sugar-Free Pumpkin Spice Syrup swaps the sweetener with the same method. If you’d rather skip syrup entirely, the Pumpkin-Maple Base behind our Clean-Ingredient tier uses real pumpkin and maple instead.

FAQ
How long does homemade pumpkin spice syrup last?
About 2 weeks in a sealed jar in the fridge.
Do I need to make this every time I want a latte?
No — that’s the point of splitting this out. Make one batch and it covers about 12 drinks; the Copycat Pumpkin Spice Latte recipe assumes you already have a jar of this on hand.
Can I use fresh-roasted pumpkin instead of canned?
Yes, as long as it’s plain pumpkin puree with no added sugar or spices — canned is just more consistent batch to batch.
