Ingredients & steps
Clean-IngredientIngredients
- 1/2 cup canned pumpkin puree (100% pumpkin, no additives)
- 6 tbsp pure maple syrup
- 1 1/2 tsp ground cinnamon
- 3/4 tsp ground ginger
- 1/4 tsp ground clove
- 1/2 tsp ground nutmeg
- 1 tsp vanilla extract (real extract, not imitation)
Steps
- 1.Whisk together the pumpkin puree, maple syrup, cinnamon, ginger, clove, nutmeg, and vanilla extract in a small bowl until fully smooth -- no cooking required, this is a whisked base, not a simmered syrup.
- 2.Store in a sealed jar in the fridge for up to 1 week.
- 3.Use 2 tbsp per drink, stirred into hot espresso until fully combined -- it's thicker than a syrup, so give it a good 15-20 seconds of stirring.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.
This is the base behind our Clean-Ingredient Pumpkin Spice Latte — real pumpkin puree and real maple syrup whisked together, no cooking and no syrup step at all. It’s pulled out into its own recipe so making a batch is a once-a-week job, not something you re-read every morning.
The Base
Whisk together 1/2 cup canned pumpkin puree (check the label — just pumpkin, nothing else), 6 tbsp pure maple syrup, 1 1/2 tsp cinnamon, 3/4 tsp ginger, 1/4 tsp clove, 1/2 tsp nutmeg, and 1 tsp real vanilla extract in a small bowl until smooth. There’s no cooking step, so it comes together in about 2 minutes.
Store it in a sealed jar in the fridge for up to a week. Makes about 6 drinks’ worth at 2 tbsp per serving.
Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle) and canned pumpkin at typical grocery pricing — real maple syrup is the priciest ingredient here, which is exactly why this base costs more per serving than a sugar-syrup base. That’s the honest tradeoff of whole ingredients over a concentrated syrup; see the Clean-Ingredient Pumpkin Spice Latte for the full per-drink math against café pricing.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — shorter than the sugar-based syrups on this site because there’s no cooking step to help preserve it.
- Give it a stir before using — pumpkin puree can settle slightly; a quick stir brings it back to a smooth consistency.
- Double the batch if you go through it in under a week — everything scales evenly.
What to Make With This
2 tbsp of this base, stirred into hot espresso before adding steamed whole milk, is the Clean-Ingredient Pumpkin Spice Latte — our top-recommended PSL tier. If you’d rather use a classic syrup instead of a whisked base, see the Pumpkin Spice Syrup (Standard) or the Sugar-Free Pumpkin Spice Syrup.

FAQ
Why does this only keep a week, when the other syrups keep two?
This base isn’t cooked, so it doesn’t get the light preservation effect a simmered sugar syrup does. A week in a sealed jar in the fridge is the safe window.
Can I use honey instead of maple syrup?
Yes — honey is a similar cost and works as a whole-ingredient swap. It shifts the flavor slightly (less caramel-like, more floral).
Do I need to make this every time I want a latte?
No — make one batch and it covers about 6 drinks over the week. The Clean-Ingredient Pumpkin Spice Latte recipe assumes you already have a jar on hand.
