Ingredients & steps

Clean-Ingredient

Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup pure maple syrup
  • 1/4 cup water
  • Pinch of fine sea salt
  • 1/4 tsp pure peppermint extract (not peppermint oil -- start here, it's potent)
  • 1/2 tsp vanilla extract

Steps

  1. 1.Whisk the cocoa powder into the water and maple syrup together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
  2. 2.Set over medium heat and bring to a gentle simmer, whisking constantly -- cocoa scorches easily on the bottom of the pan if left alone.
  3. 3.Simmer 4-5 minutes, still whisking occasionally, until smooth and slightly thickened.
  4. 4.Remove from heat and stir in the salt, peppermint extract, and vanilla extract. Taste once slightly cooled and add up to 1/4 tsp more peppermint extract if you want it more assertive.
  5. 5.Let cool completely, then store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

This is the sauce behind our Clean-Ingredient Peppermint Mocha — the same real unsweetened cocoa powder our Standard sauce uses, with real maple syrup standing in for the cane sugar and pure peppermint extract for the seasonal flavor.

What “Clean-Ingredient” Means Here

Cocoa powder, real maple syrup, and pure peppermint extract, plus a splash of water to keep it pourable. No refined cane sugar, no artificial mint flavoring, nothing you’d need a label to identify. It’s not a “diet” version like our Sugar-Free tier — it’s a rebuilt-from-real-food version, and it lands a bit higher in calories than the Standard sauce, since maple syrup isn’t meaningfully lower-calorie than cane sugar. The upgrade here is ingredient sourcing, not a nutrition hack.

The Sauce

Whisk the cocoa powder into the water and maple syrup together before turning on the heat — cocoa clumps badly if you dump it into hot liquid, same rule as the Standard sauce. Set over medium heat and simmer 4-5 minutes, whisking often so it doesn’t scorch. Off the heat, stir in a pinch of salt, 1/4 tsp pure peppermint extract, and 1/2 tsp vanilla extract, then let it cool completely.

Start with 1/4 tsp of peppermint extract, not more — same guidance as the Standard sauce. You can always stir in a little more once it’s cooled and tasted, but you can’t take it back out.

Store the finished sauce in a sealed jar in the fridge for up to 2 weeks. It makes roughly 10 drinks’ worth at 2 tbsp per serving.

Batch Cost, Real-Maple Version
This batch (10 servings)$5.33 total
Per 2 tbsp serving~$0.53

Assumptions: unsweetened cocoa powder at typical grocery pricing ($0.09-0.11/tbsp) and real maple syrup at typical grocery pricing ($8-9 for a 12oz bottle) — maple syrup is the dominant cost here, same as the plain Cocoa-Maple Sauce — plus pure peppermint extract at typical grocery pricing (a 1 fl oz bottle running about $5.49, yielding roughly 6 tsp — 1/4 tsp comes out to about $0.23). See the Clean-Ingredient Peppermint Mocha for the full per-drink math against café pricing.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard sauce.
  • Give it a stir before using — cocoa sauces can separate slightly in the fridge; that’s normal.
  • Double the batch if you’re making these all season — everything scales evenly.

Swaps & Notes

  • This isn’t a lower-calorie swap. Maple syrup runs slightly higher calories per tablespoon than table sugar — the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free Peppermint Mocha Sauce instead.
  • Dutch-process vs. natural cocoa powder both work here — Dutch-process gives a slightly darker, milder flavor.
  • Prefer a candy-cane flavor over clean peppermint? A few drops of natural beet-based food coloring plus a slightly heavier hand with the extract gets you closer to that look while staying refined-sugar-free.

What to Make With This

2 tbsp of this sauce, stirred into hot espresso before adding steamed milk, is the Clean-Ingredient Peppermint Mocha — our top-recommended peppermint mocha tier. If cost matters more than ingredient sourcing, the Peppermint Mocha Sauce (Standard) uses the same method with cane sugar; if minimizing sugar is the priority, see the Sugar-Free Peppermint Mocha Sauce.

FAQ

Is this actually lower in sugar than the Standard peppermint mocha sauce?

Not meaningfully — maple syrup and cane sugar carry a similar amount of sugar per serving. If sugar content specifically is your priority, see the Sugar-Free Peppermint Mocha Sauce instead, which is built to minimize it.

Why does this cost more than the Standard sauce?

Real maple syrup simply costs more per serving than cane sugar. It’s still a large saving over café peppermint mocha pricing — just the smallest saving of the three peppermint mocha tiers.

Do I need to make this every time I want a latte?

No — one batch covers about 10 drinks over two weeks. The Clean-Ingredient Peppermint Mocha recipe assumes you already have a jar on hand.
