Steps
- 1.Toast the coconut flakes in a dry skillet over medium heat, stirring or tossing constantly, until golden brown and fragrant, about 3-5 minutes -- watch closely, coconut goes from toasted to burnt in under a minute once it starts browning.
- 2.Warm the maple syrup gently in a small saucepan over low heat -- just warm, not simmering. Stir in the toasted coconut flakes, remove from heat, cover, and let steep for 20 minutes.
- 3.Strain through a fine-mesh strainer, pressing on the solids to extract as much liquid as possible, into a jar. Stir in the coconut extract now if using.
- 4.Let cool completely, then store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Toasted Coconut Latte — real toasted coconut flakes, steeped into real maple syrup instead of dissolving sugar and reaching for a bottle of extract. Unlike our Toasted Hazelnut-Maple Syrup, which is honest about still needing a little real extract to read as “hazelnut” once diluted, toasted coconut carries real, recognizable flavor on its own — the coconut extract below is optional here, not a crutch the recipe depends on.
Not the same drink as our Ube Coconut Cold Brew. That recipe uses coconut milk alongside ube (purple yam) extract in a layered cold brew. This syrup puts toasted coconut itself front and center as the primary flavor, and it works in any hot or iced latte.
What “Clean-Ingredient” Means Here
Two ingredients doing the work: real maple syrup and real toasted coconut. No water, no dissolved granulated sugar, no gums — and because the toasting step carries real flavor on its own, you don’t need the coconut extract that a similarly “clean” hazelnut or almond syrup would lean on. It’s not a “diet” version like our Sugar-Free tier — same honest tradeoff as every Clean-Ingredient recipe on this site: it’s not lower in calories or sugar than the Standard version, because maple syrup isn’t meaningfully lower in either. The upgrade here is ingredient sourcing, not a nutrition hack.
The Syrup
Toast 1 cup unsweetened coconut flakes in a dry skillet over medium heat, stirring constantly, until golden brown and fragrant, about 3-5 minutes. Warm 3/4 cup maple syrup gently in a small saucepan — just warm, don’t let it simmer — then stir in the toasted coconut, take it off the heat, cover, and let it steep for 20 minutes. Strain through a fine-mesh strainer, pressing on the solids to get all the liquid out, into a jar. Stir in the optional coconut extract if using, and let cool completely before bottling.
Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle, $0.35/tbsp, the same figure our other maple-based syrups use) and unsweetened coconut flakes at typical grocery/bulk-bin pricing ($5-6/lb, about $1.05 for the 1 cup used here).
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge, same as our other steeped syrups.
- Give it a shake before using — a little coconut oil can separate out and rise to the top; that’s normal.
- Double the batch if you go through coconut lattes quickly — everything scales evenly (2 cups coconut flakes, 1 1/2 cups maple syrup).
Swaps & Notes
- No fine-mesh strainer? A clean coffee filter or cheesecloth over a jar works just as well, just slower.
- Skip the toasting step if you’re in a hurry — raw coconut steeped in warm maple still adds some flavor, but toasting is what gets you the deeper, roasted character worth the extra few minutes.

No — that’s the main way this recipe differs from our Toasted Hazelnut-Maple Syrup, which does need a little real extract to read clearly as “hazelnut.” Real toasted coconut is a strong, recognizable flavor on its own; the extract here is purely for extra intensity if you want it.
Why strain the coconut out instead of leaving it in?
A syrup with coconut solids in it won’t pour or measure consistently, and it’s harder to stir smoothly into hot espresso. Straining keeps the syrup pourable while still capturing the toasted-coconut flavor and aroma that steeped into the maple syrup.
Do I need to make this every time I want a latte?
