Ingredients & steps
Ingredient-HonestIngredients
- 3/4 cup pure maple syrup
- 1/4 tsp fine sea salt
- 1/2 tsp vanilla extract
- 1-2 tsp warm water, to thin after broiling, if needed
Steps
- 1.Pour the maple syrup into a shallow oven-safe dish or small rimmed sheet pan, so it spreads in a thin layer. Broil on high for 3-5 minutes, watching closely -- it will bubble, then darken and brown at the edges. This direct, high-heat browning is what gives this version a genuinely toasted note, not just a caramelized one.
- 2.Remove once it's visibly darker and the edges show real browning -- it will look alarmingly bubbly straight out of the broiler; that settles as it cools.
- 3.Let it settle for a minute, then whisk in the salt and vanilla extract. If it's thickened more than a pourable syrup, whisk in 1-2 tsp warm water.
- 4.Let cool completely. Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink.

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. This is the syrup behind our Ingredient-Honest Toasted Marshmallow Cream Cold Brew — and it doesn’t contain a single marshmallow.
An Honest Note Before You Make This
Real marshmallows are sugar, corn syrup, gelatin, and water, whipped with air. That’s a genuinely fun thing to broil and melt into a syrup (see our Standard Toasted Marshmallow Syrup), but corn syrup and a refined-sugar base don’t clear this tier’s bar — same rule that already keeps a real hazelnut or pistachio syrup out of this tier when no clean commercial extract exists (Criteria 1 and 2 of our Ingredient-Honest standard). Rather than drop toasted marshmallow from this tier entirely, we rebuilt the flavor from a different real ingredient: maple syrup, broiled under direct heat until it genuinely browns and toasts, the same reaction that gives real marshmallows their char — just without the marshmallow.
This is not a lower-calorie or lower-sugar version. At 104 calories per 2 tbsp serving, it runs more than double the Standard syrup’s 51 — real melted marshmallow is mostly air and water whipped into sugar syrup, while maple syrup straight from the bottle has none of that dilution. If lower calories is your actual goal here, the Sugar-Free Toasted Marshmallow Syrup is the one built for that. This version is for readers who specifically want a real-food, no-corn-syrup, no-gelatin ingredient list and are fine with the cost and calorie tradeoff that comes with it.
The Syrup
Pour 3/4 cup maple syrup into a shallow oven-safe dish and broil on high for 3-5 minutes — it bubbles hard, then visibly darkens and browns at the edges. That direct high-heat char is the whole point: it’s closer to what actually happens to a marshmallow over heat than a gentler stovetop reduction would be. Let it settle a minute, whisk in 1/4 tsp salt and 1/2 tsp vanilla extract, thin with a splash of warm water if it’s too thick, and let it cool completely.
Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle, same figure our other Ingredient-Honest syrups use). This is the most expensive and highest-calorie tier of the three Toasted Marshmallow syrups — a real ingredient-sourcing upgrade, not a nutrition one, exactly like our Maple Caramel Syrup.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge.
- Thickens more than a stovetop-reduced syrup as it cools — a few seconds in a warm water bath loosens it back up.
- Double the batch if you go through this quickly — broil in a wider dish so the syrup still spreads thin enough to brown evenly.
Swaps & Notes
- Watch it the entire time under the broiler. Maple syrup goes from “toasted” to “burnt and bitter” faster than you’d expect, especially in the last 30-60 seconds.
- This browns differently than the Maple Caramel Syrup. That recipe gently reduces maple on the stovetop; this one broils it under direct high heat specifically to mimic a real char, not just concentration. Expect a slightly smokier, more toasted flavor here than in the caramel version.
What to Make With This
2 tbsp of this syrup, mixed into cold brew with a light sweet cream blend, is our Ingredient-Honest Toasted Marshmallow Cream Cold Brew. If cost and calories matter more than avoiding marshmallows specifically, the Toasted Marshmallow Syrup uses real (broiled) marshmallows; the Sugar-Free Toasted Marshmallow Syrup uses sugar-free marshmallows the same way.

FAQ
Why doesn’t this recipe just use real marshmallows, like the Standard version?
Marshmallows are made primarily from corn syrup and refined sugar, with gelatin for structure — none of which clear this tier’s ingredient bar. This version reaches for the same toasted-sweet flavor from a different, cleaner ingredient instead.
Is this actually a healthier toasted marshmallow syrup?
No, and we don’t want to oversell it — it runs higher in both calories and sugar than the Standard version. “Ingredient-Honest” here means ingredient sourcing, not a nutrition upgrade.
Do I need to make this every time I want the drink?
No — one batch covers about 6 drinks over two weeks. The Ingredient-Honest Toasted Marshmallow Cream Cold Brew recipe assumes you already have a jar on hand.
