Funnel Cake Syrup
Ingredients & steps
StandardIngredients
- 1 cup water
- 1 cup granulated sugar
- 2 tbsp unsalted butter
- 1 tbsp vanilla extract
- 1/8 tsp ground cinnamon (barely there, not a churro-level dose)
- Pinch of fine sea salt
Steps
- 1.Combine the water and sugar in a small saucepan over medium heat, stirring until the sugar fully dissolves.
- 2.Whisk in the butter until fully melted and the mixture looks glossy.
- 3.Remove from heat and stir in the vanilla extract, cinnamon, and salt. Let cool completely.
- 4.Store in a sealed jar in the fridge for up to 1 week (real butter is in this one, shorter than our plain sugar syrups). Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk or blending.

This is the syrup behind our Funnel Cake Latte/Chiller — built to taste like fried dough and powdered sugar, not a cinnamon-sugar churro, even though both flavors live in the same “fairground dessert” space.
Why This Isn’t Just Our Churro Syrup Again
Reviewers covering 7 Brew’s actual funnel cake order describe it as closer to a cinnamon-bun-adjacent vanilla flavor paired with caramel and white chocolate than to a churro’s cinnamon-sugar coating — and the syrups here are built to match that real difference, not just carry different names for the same thing:
- Churro Syrup leans hard into cinnamon — a full tablespoon of it against brown sugar, finished with an actual cinnamon-sugar rim at the glass. Cinnamon is the lead flavor, full stop.
- This syrup uses a barely-there 1/8 tsp of cinnamon — present, but nowhere near the lead. The dominant notes are real melted butter and a notably heavier pour of vanilla than our regular Vanilla Syrup uses, which is what gives it a fried-dough, cake-batter character instead of a spice-forward one. At the glass, it’s finished with a caramel drizzle and a dusting of powdered sugar — not a cinnamon-sugar rim.
The Syrup
Combine 1 cup water and 1 cup sugar in a saucepan over medium heat until the sugar dissolves. Whisk in 2 tbsp butter until melted and glossy. Off the heat, stir in 1 tbsp vanilla extract, 1/8 tsp cinnamon, and a pinch of salt. Let cool completely.
Assumptions: granulated sugar and butter at this site’s standard rates, Costco-size vanilla extract.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — real butter in this one, shorter than plain sugar-only syrups.
- Give it a shake before using — butter can separate slightly as it sits.
Swaps & Notes
- Don’t add more cinnamon to make it “more fall.” That’s what turns this back into a churro syrup — the whole point is keeping cinnamon as a background note, not the lead.
- Watching sugar? This one’s Standard-tier only right now — a Sugar-Free or Ingredient-Honest version may follow later.
What to Make With This
2 tbsp of this syrup, blended with espresso, milk, and ice, finished with a caramel drizzle and powdered sugar, is our Funnel Cake Latte/Chiller.

FAQ
Is this just a renamed Churro Syrup?
No — Churro Syrup leads with a full tablespoon of cinnamon against brown sugar. This syrup uses barely 1/8 tsp of cinnamon and leads instead with real butter and a heavy vanilla pour, finished with caramel and powdered sugar rather than a cinnamon-sugar rim.
Why so much vanilla compared to your regular Vanilla Syrup?
A heavier vanilla pour is what gives this a cake-batter, fried-dough character rather than reading as a plain vanilla latte with a caramel drizzle on top — it’s a deliberate difference from the regular syrup, not an oversight.
How long does this keep?
About 1 week in a sealed jar in the fridge, because of the real butter.
