  • 1 cup water
  • 1 cup granulated sugar
  • Zest of 1 large orange, peeled off in wide strips with a vegetable peeler (avoid the white pith -- it's bitter)
  • 8 green cardamom pods, lightly crushed
  • 1/2 tsp vanilla extract

Steps

  1. 1.Combine the water, sugar, orange zest strips, and crushed cardamom pods in a small saucepan over medium heat, stirring until the sugar fully dissolves.
  2. 2.Bring to a gentle simmer for 5 minutes so the orange oil and cardamom infuse into the syrup -- a bit longer than our other spice syrups, since citrus oil takes a few extra minutes to release.
  3. 3.Remove from heat, cover, and let steep for 10 more minutes off the heat for a fuller orange flavor.
  4. 4.Strain through a fine-mesh strainer to remove the zest strips and cardamom pods -- unlike our ground-cinnamon syrups, this one won't dissolve clean on its own, so straining actually matters here.
  5. 5.Stir in the vanilla extract while the syrup is still warm. Let cool completely.
  6. 6.Store in a sealed jar in the fridge for up to 2 weeks. Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Orange Cardamom Latte – a flavor combo you’re more likely to spot on a specialty or third-wave café menu than at a big chain, which makes it one of the more distinctive flavors on this site. It’s spice-forward like our Chai family, but built the opposite way around: orange is the lead note here, and cardamom is a supporting player, not one spice among five in a full blend. The Syrup

Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat, stirring until the sugar dissolves. Add wide strips of orange zest (peeled off with a vegetable peeler, avoiding the bitter white pith underneath) and 8 lightly crushed green cardamom pods. Bring it to a gentle simmer for 5 minutes – citrus oil needs a little more heat time than ground cinnamon does to actually release into the syrup. Remove from the heat, cover the pan, and let it steep for another 10 minutes off the heat for a fuller orange flavor.

Strain the syrup through a fine-mesh strainer to catch the zest strips and cardamom pods – this is the one real technique difference from our other Standard-tier syrups: ground cinnamon dissolves and stays in the jar, but zest strips and whole pods don’t, and leaving them in would eventually turn the syrup bitter as the pith-adjacent oils kept steeping. Stir in the vanilla extract while the syrup is still warm, then let it cool completely.

Assumptions: sugar, one orange (for zest), whole green cardamom pods, and vanilla extract at typical grocery pricing. Real cardamom pods and fresh citrus cost more than a single ground spice, which is why this runs a bit above our plain cinnamon or vanilla syrups – it’s still a fraction of what a bottled specialty syrup costs, and there’s no artificial citrus flavoring in it.

Storage & Shelf Life

  • Give it a shake before using – trace cardamom oil can separate slightly; that’s normal and doesn’t affect flavor.

  • Why real zest instead of orange extract? The aromatic oils that actually carry orange flavor live in the peel, not the juice, and they’re genuinely volatile – a fresh-peeled strip releases a brighter, truer citrus note than a bottle of extract that’s been sitting on a shelf, and most bottled orange extracts read as one-note or slightly artificial by comparison. Fresh zest is also basically free if you’re already juicing the orange for something else.
  • No cardamom pods on hand? 1/4 tsp ground cardamom works as a substitute – whisk it in directly instead of straining, but expect a slightly muddier (not clear) syrup and a less rounded flavor, similar to the ground-vs-whole tradeoff our chai recipes make.

Is this the same as chai?

No – chai is a full spice blend (cinnamon, ginger, cardamom, clove, black pepper) built on black tea, with cardamom as just one ingredient among several. Do I have to strain out the zest and cardamom pods?

Yes – this is different from our ground-cinnamon syrups, which dissolve and stay in the jar. Zest strips and whole pods don’t dissolve, and leaving them in the syrup past the steep time can pull bitter, pith-like notes out over the following days. Straining takes one extra step and keeps the syrup clean and consistent.
