- 3/4 cup granulated monk fruit or allulose sweetener
- 1/2 cup unsweetened cocoa powder
- Pinch of fine sea salt
- 1/4 tsp pure peppermint extract (not peppermint oil -- start here, it's potent)
- 1/2 tsp vanilla extract
- Pinch of xanthan gum (optional, for body/mouthfeel)
Steps
- 1.Whisk the water, monk fruit or allulose sweetener, and cocoa powder together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
- 2.Set over medium heat and bring to a gentle simmer, whisking constantly -- cocoa scorches easily on the bottom of the pan if left alone.
- 3.Simmer 4-5 minutes, still whisking occasionally, until smooth and slightly thickened -- sugar-free sweeteners can take a little longer to fully dissolve than sugar.
- 4.If using xanthan gum for body, whisk in the pinch now off-heat, adding it slowly to avoid clumping.
- 5.Remove from heat and stir in the salt, peppermint extract, and vanilla extract. Taste once slightly cooled and add up to 1/4 tsp more peppermint extract if you want it more assertive.
- 6.Let cool completely, then store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the sauce batch behind our Sugar-Free Peppermint Mocha — the same real unsweetened cocoa powder and pure peppermint extract our Standard sauce uses, with a monk fruit or allulose sweetener in place of the sugar.
The Sauce
Whisk the cocoa powder into the water and monk fruit or allulose sweetener before turning on the heat — cocoa clumps badly in hot liquid unless it’s already dispersed, same rule as every cocoa-based sauce on this site. Set over medium heat and simmer 4-5 minutes, whisking often so it doesn’t scorch — sugar-free sweeteners can take a little longer than sugar to fully dissolve, so don’t rush it. If you want more body, whisk in a small pinch of xanthan gum off the heat. Finish with a pinch of salt, 1/4 tsp pure peppermint extract, and 1/2 tsp vanilla extract, then let it cool completely.
Start with 1/4 tsp of peppermint extract, not more — same guidance as the Standard sauce. It’s far more concentrated than a peppermint syrup, and you can always add a bit more once it’s cooled and tasted, but not take it back out.
Store the finished sauce in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

Storage & Shelf Life

- Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste.
