Ingredients & steps

Sugar-Free

Ingredients

  • 1 cup water
  • 1 cup granulated monk fruit or allulose sweetener
  • 1 tsp real hazelnut extract

Steps

  1. 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
  2. 2.Bring to a gentle simmer and cook for 2-3 minutes.
  3. 3.Remove from heat and stir in the hazelnut extract. Let cool completely.
  4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

This is the syrup batch behind our Sugar-Free Hazelnut Latte — a simple 1 cup water, 1 cup monk fruit or allulose, 1 tsp hazelnut extract batch, its own full recipe with its own cost and calorie math.

The Syrup

Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — sugar-free sweeteners can take a little longer than plain sugar, so don’t rush this step. Bring to a gentle simmer for 2-3 minutes. Off the heat, stir in 1 tsp real hazelnut extract and let it cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

Batch Cost, Sugar-Free Version
This batch (12 servings)$3.60 total
Per 2 tbsp serving~$0.30

Assumptions: monk fruit/allulose sweetener at typical grocery pricing ($3/cup at bulk-bag pricing, same figure our other sugar-free syrups use) and hazelnut extract at typical specialty-extract pricing ($7 for a standard 2 fl oz grocery bottle, ~$0.60/tsp — hazelnut extract isn’t sold in Costco-bulk sizes the way vanilla is). Your numbers shift a little with which sweetener brand you use; the gap versus the sugared version doesn’t change much.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
  • Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does — gently reheat the jar in a warm water bath to re-dissolve before using.
  • Double the batch if you go through hazelnut lattes quickly — everything scales evenly.

Sweetener Notes

  • Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here — the easiest substitution if this is your first sugar-free syrup.
  • Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste.
  • This same base method — swap the flavor extract — is the foundation of every other sugar-free syrup on the site, including Sugar-Free Vanilla Syrup and Sugar-Free Caramel Syrup.

What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding milk, is the Sugar-Free Hazelnut Latte. If sugar content isn’t your main concern, the Hazelnut Syrup (Standard) uses the same method with regular sugar, or the Toasted Hazelnut-Maple Syrup behind our Clean-Ingredient tier steeps real toasted hazelnuts into real maple syrup instead.

FAQ

Is this the same recipe as the hazelnut flavor in the Homemade Sugar-Free Syrups roundup?

Yes, same method and ratios — this page just gives it its own full write-up, cost breakdown, and latte pairing instead of sharing a page with the vanilla and caramel flavors.

Do I need to make this every time I want a latte?

No — make one batch and it covers about 12 drinks over two weeks. The Sugar-Free Hazelnut Latte recipe assumes you already have a jar on hand.

Does monk fruit or allulose change the taste?

Slightly — both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The hazelnut extract is still the dominant flavor.
