Ingredients

  • 1 cup water
  • 1 cup granulated monk fruit or allulose sweetener
  • Zest of 1 large orange, peeled off in wide strips with a vegetable peeler (avoid the white pith -- it's bitter)
  • 8 green cardamom pods, lightly crushed
  • 1/2 tsp vanilla extract

Steps

  1. 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
  2. 2.Add the orange zest strips and crushed cardamom pods and bring to a gentle simmer for 5 minutes so the orange oil and cardamom infuse into the syrup.
  3. 3.Remove from heat, cover, and let steep for 10 more minutes off the heat for a fuller orange flavor.
  4. 4.Strain through a fine-mesh strainer to remove the zest strips and cardamom pods.
  5. 5.Stir in the vanilla extract while the syrup is still warm. Let cool completely.
  6. 6.Store in a sealed jar in the fridge for up to 2 weeks. Give it a shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Sugar-Free Orange Cardamom Latte – the same method as our Standard syrup, with a monk fruit or allulose sweetener standing in for cane sugar. Real orange zest and whole cardamom pods still carry the flavor either way; the sweetener swap doesn’t change the technique.

The Syrup

Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves – sugar-free sweeteners can take a little longer than plain sugar, so don’t rush this step. Add wide strips of orange zest and 8 lightly crushed green cardamom pods, then bring to a gentle simmer for 5 minutes. Remove from heat, cover, and let steep for 10 more minutes off the heat. Strain out the zest and pods, stir in the vanilla extract while still warm, and let cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
  • Give it a shake before using – trace cardamom oil can separate slightly, same as the Standard syrup.
  • Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does – gently reheat the jar in a warm water bath to re-dissolve before using.

Sweetener Notes

  • Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here – the easiest substitution if this is your first sugar-free syrup.
  • Stevia works but is far more concentrated – use a fraction of the amount and adjust to taste, since stevia can read as slightly bitter at higher concentrations, and that bitterness can compound with cardamom’s own natural bite.

FAQ

Do I need to make this every time I want a latte?

No – make one batch and it covers about 12 drinks over two weeks. The Sugar-Free Orange Cardamom Latte recipe assumes you already have a jar on hand.

Does monk fruit or allulose change the taste?

Slightly – both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The orange zest and cardamom still carry most of the flavor, since they’re steeped in either way.

Can I skip straining if I’m using ground cardamom instead of pods?

You still need to strain out the orange zest strips either way – zest never fully dissolves. If you swap in 1/4 tsp ground cardamom in place of the pods, you can whisk it directly into the syrup rather than straining for the cardamom specifically, but the zest strips still need to come out.
