- 1 cup pure maple syrup
- Zest of 2 oranges, peeled off in wide strips with a vegetable peeler (avoid the white pith -- it's bitter)
- 8-10 green cardamom pods, lightly crushed
- 1/2 tsp vanilla extract
- 1-2 tbsp warm water, to thin after infusing
Steps
- 1.Pour the maple syrup into a small saucepan and add the orange zest strips and crushed cardamom pods. Bring to a gentle simmer over medium-low heat and let it infuse for 8-10 minutes, swirling occasionally -- it will darken slightly and thicken a little as it reduces.
- 2.Remove the zest strips and cardamom pods and discard (or rinse the zest strips and save for a garnish -- see Swaps & Notes).
- 3.Whisk in 1-2 tbsp warm water off the heat to loosen the syrup back to a pourable consistency -- it thickens more than you'd expect as it cools.
- 4.Stir in the vanilla extract. Let cool completely.
- 5.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Orange Cardamom Latte – real maple syrup standing in for the cane sugar our Standard syrup uses, with the same orange zest and cardamom pods infused directly into the maple instead of a quick sugar-water simmer. Maple is thick enough that citrus oil and cardamom release into it more slowly than into water, which is why this version gets a longer, gentler infusion where the Standard syrup can get away with a shorter simmer.

Maple syrup, orange zest, cardamom, and vanilla extract – four ingredients you could read off the label without a dictionary. No dissolved granulated sugar, no citrus extract, no gums. - Thickens more in the fridge than the Standard syrup does – a few seconds in a warm water bath loosens it back up.

- Save the spent zest strips for a garnish – rinsed and dried, a curled strip makes a nice finishing touch on the latte, echoing the specialty-café presentation without buying candied orange peel.
- In a hurry? Bottled orange zest paste or 1/4 tsp ground cardamom work in a pinch, but they lose the brighter, truer flavor the fresh-zest infusion is built around – the extra few minutes with a vegetable peeler is worth it if you can spare it.

Why infuse the zest and cardamom directly into the maple instead of simmering them in water first?
Maple syrup is thick enough that it holds onto citrus oil and cardamom’s aromatic compounds better than a quick water simmer does, so infusing directly in the maple pulls a rounder, more concentrated flavor – the tradeoff is a longer 8-10 minute infusion instead of the Standard syrup’s 5-minute simmer.
