Ingredients & steps
Sugar-FreeIngredients
- 1 cup water
- 3/4 cup granulated monk fruit or allulose sweetener
- 1/2 cup unsweetened cocoa powder
- Pinch of fine sea salt
- 1/2 tsp vanilla extract
- Pinch of xanthan gum (optional, for body/mouthfeel)
Steps
- 1.Whisk the water, monk fruit or allulose sweetener, and cocoa powder together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
- 2.Set over medium heat and bring to a gentle simmer, whisking constantly -- cocoa scorches easily on the bottom of the pan if left alone.
- 3.Simmer 4-5 minutes, still whisking occasionally, until smooth and slightly thickened -- sugar-free sweeteners can take a little longer to fully dissolve than sugar.
- 4.If using xanthan gum for body, whisk in the pinch now off-heat, adding it slowly to avoid clumping.
- 5.Remove from heat and stir in the salt and vanilla extract. Let cool completely.
- 6.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. This is the sauce batch behind our Sugar-Free Mocha — the same real unsweetened cocoa powder our Standard sauce uses, with a monk fruit or allulose sweetener in place of the sugar.
The Sauce
Whisk the cocoa powder into the water and monk fruit or allulose sweetener before turning on the heat — cocoa clumps badly in hot liquid unless it’s already dispersed, same rule as the Standard sauce. Set over medium heat and simmer 4-5 minutes, whisking often so it doesn’t scorch — sugar-free sweeteners can take a little longer than sugar to fully dissolve, so don’t rush it. If you want more body, whisk in a small pinch of xanthan gum off the heat. Finish with a pinch of salt and 1/2 tsp vanilla extract, then let it cool completely.
Store the finished sauce in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Assumptions: unsweetened cocoa powder at typical grocery pricing ($0.09-0.11/tbsp) and monk fruit/allulose sweetener at typical grocery pricing ($3/cup at bulk-bag pricing) — pricier per cup than plain sugar, but a little goes a long way.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard sauce.
- Xanthan gum is optional but recommended if you’re used to store-bought sugar-free syrups’ thicker mouthfeel.
- Give it a stir before using — cocoa sauces can separate slightly in the fridge; that’s normal.
Sweetener Notes
- Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here.
- Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste.
What to Make With This
2 tbsp of this sauce, stirred into hot espresso before adding milk, is the Sugar-Free Mocha. If sugar content isn’t your main concern, the Mocha Sauce (Standard) uses the same method with regular sugar, or the Cocoa-Maple Sauce behind our Clean-Ingredient tier swaps in real maple syrup instead.

FAQ
Can I buy a sugar-free mocha sauce instead of making it?
Some chains carry a sugar-free chocolate syrup, but this homemade version costs a fraction of the per-pump price and uses real cocoa powder rather than a flavor blend.
Do I need to make this every time I want a latte?
No — make one batch and it covers about 12 drinks over two weeks. The Sugar-Free Mocha recipe assumes you already have a jar on hand.
Why whisk the cocoa into cold water instead of adding it once the pan’s hot?
Cocoa powder clumps almost instantly in hot liquid unless it’s already fully dispersed. Whisking it in cold, then heating everything together, avoids that entirely — same reason the Standard sauce does it this way.
