Ingredients & steps

Clean-Ingredient

Ingredients

  • 3/4 cup pure maple syrup
  • 1 tbsp pure vanilla extract
  • 1 1/2 tsp ground nutmeg (plus extra, freshly grated if you have it, for topping)
  • 3/4 tsp ground cinnamon
  • Optional: tiny pinch of ground clove

Steps

  1. 1.Whisk the maple syrup, vanilla extract, nutmeg, and cinnamon together in a small bowl or jar until fully combined -- no cooking required, maple syrup is already a thin, pourable liquid.
  2. 2.Stir in a small pinch of ground clove now if using -- it's easy to overdo, so start tiny.
  3. 3.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Clean-ingredient" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

This is the syrup behind our Clean-Ingredient Eggnog Latte — real maple syrup standing in for the cane-sugar syrup our Standard tier uses, with the same nutmeg-and-cinnamon spice profile either way. There’s no stovetop step at all: maple syrup is already a thin, pourable liquid, so this is a 2-minute whisk, not a simmer.

What “Clean-Ingredient” Means Here

Four ingredients you could read off the label without a dictionary: maple syrup, vanilla extract, nutmeg, and cinnamon. No water, no dissolved granulated sugar, no rum extract or other flavoring compounds. This version leans on the actual spices harder than the Standard syrup does, since there’s no simmer step to bloom them the same way — that’s why the whisking step matters here more than it does in some of our other Clean-Ingredient syrups.

Batch Cost, Real-Maple Version
This batch (10 servings)$5.25 total
Per 2 tbsp serving~$0.53

Assumptions: real maple syrup at typical grocery pricing ($8-9 for a 12oz bottle, same figure our Pumpkin-Maple Base uses) and Costco-size pure vanilla extract ($0.30/tbsp). Maple syrup is the entire cost of this batch — it’s also why this tier costs more per drink than the Standard or Sugar-Free eggnog syrups. See the Clean-Ingredient Eggnog Latte for the full per-drink math against café pricing.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge.
  • Give it a shake before using if any spice has settled at the bottom of the jar.
  • Double the batch if you go through eggnog lattes quickly through the holidays — everything scales evenly (1 1/2 cups maple syrup, 2 tbsp vanilla extract, 1 tbsp nutmeg, 1 1/2 tsp cinnamon).

Swaps & Notes

  • Honey works too as a whole-food swap for maple syrup, at a similar cost — it shifts the flavor toward floral instead of maple’s caramel-like note, which is a slightly bigger departure here than in our vanilla-maple syrup, since maple’s caramel note pairs especially well with nutmeg.
  • This isn’t a lower-calorie swap. Maple syrup runs slightly higher calories per tablespoon than table sugar — the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free Eggnog Syrup instead.
  • Go easy on the clove. It’s optional for a reason — a little goes a long way and it’s easy to tip the whole batch toward tasting like mulled wine instead of eggnog.

What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding steamed whole milk, is the Clean-Ingredient Eggnog Latte — our top-recommended eggnog tier. If cost matters more than ingredient sourcing, the Eggnog Syrup (Standard) uses the same spice profile with cane sugar; if minimizing sugar is the priority, see the Sugar-Free Eggnog Syrup.

FAQ

Why no water or simmer step in this version, when the Standard syrup uses one?

The Standard syrup dissolves granulated sugar into water and briefly simmers to bloom the spices. Maple syrup is already pourable on its own, so there’s nothing to dissolve — the whisking step here does the same job of distributing the nutmeg and cinnamon evenly, just without heat.

Is this lower in sugar than the Standard syrup?

Not meaningfully — it’s a similar amount of sugar, just from maple instead of cane. If sugar content specifically is your priority, see the Sugar-Free Eggnog Syrup instead, which is built to minimize it.

Do I need to make this every time I want a latte?

No — one batch covers about 10 drinks over two weeks. The Clean-Ingredient Eggnog Latte recipe assumes you already have a jar on hand.
