    Apple Syrup

    The BYOB Team35 min1 batch (about 12 servings, 2 tbsp each)~$0.08/serving (~$1.01 per batch, makes ~12 servings)69 cal/serving

    Ingredients & steps

    Standard

    Ingredients

    • 2 cups apple cider (unfiltered, not apple juice)
    • 3/4 cup granulated sugar
    • 1/2 tsp vanilla extract
    • Pinch of fine sea salt

    Steps

    1. 1.Combine the apple cider and granulated sugar in a medium saucepan over medium heat, stirring until the sugar dissolves.
    2. 2.Bring to a simmer and cook, uncovered, 25-30 minutes, stirring occasionally, until reduced by roughly half and syrupy enough to coat the back of a spoon.
    3. 3.Remove from heat and stir in the vanilla extract and salt. Let cool completely -- it thickens noticeably more as it cools.
    4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink (or 1 tbsp where a recipe calls for a lighter pour, like our Apple Matcha Latte).

Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

This site already has two apple-cider-based syrups — Apple Crisp Syrup and Apple Cider Donut Syrup — but both are built around a specific baking-spice profile, not plain apple. A pairing like apple and matcha, where matcha’s own vegetal flavor doesn’t want cinnamon or butter competing underneath it, needed a syrup where apple carries the whole flavor on its own.

Why This Is a Real Gap, Not a Rename

Checking before building this mattered: Apple Crisp Syrup’s own page is explicit that it’s brown sugar, a whole cinnamon stick, and nutmeg — a baked-crumble flavor. Apple Cider Donut Syrup swaps in white sugar and real butter for a glazed-donut character, with its own cinnamon ratio. Neither is “basically plain apple with an extra step” — both are genuinely built around a specific dessert flavor. This syrup strips that back down to real apple cider and sugar alone, nothing else.

    The Syrup

Combine 2 cups apple cider (real cider, not clear filtered apple juice) and 3/4 cup granulated sugar in a medium saucepan over medium heat, stirring until the sugar dissolves. Bring it to a simmer and let it reduce, uncovered, for 25-30 minutes, stirring occasionally, until it’s reduced by about half and coats the back of a spoon. Off the heat, stir in 1/2 tsp vanilla extract and a pinch of salt. Let it cool completely — it thickens more than you’d expect once it’s cold.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

    Batch Cost vs. Store-Bought Syrup
    This batch (12 servings)$1.01 total
    Per 2 tbsp serving~$0.08
Typical store-bought apple syrup, per serving$0.40-$0.48

Assumptions: real apple cider and granulated sugar at typical grocery pricing — the same cider cost this site’s other apple syrups use. A store-bought comparison assumes a ~750ml pump bottle of apple-flavored syrup around $10-12, yielding about 25 servings at 2 tbsp each — and most bottled versions are artificially flavored, not built from real cider.

    Storage & Shelf Life

    • Keeps about 2 weeks in a sealed jar in the fridge.
    • Thickens more in the fridge than a plain sugar syrup does, since it’s a real reduction — a few seconds in a warm water bath loosens it back up.
    • Double the batch if you go through these quickly — everything scales evenly (4 cups cider, 1 1/2 cups sugar).

    Swaps & Notes

    • No apple cider on hand? Cloudy, unfiltered apple juice is a reasonable stand-in, though it tastes a bit thinner and sweeter than real cider.
    • Want cinnamon and nutmeg instead? See our Apple Crisp Syrup. Want a glazed-donut flavor with real butter instead? See Apple Cider Donut Syrup. This syrup is deliberately the plain version.
    • Watching sugar? This is Standard tier only for now — a Sugar-Free or Ingredient-Honest version may follow later if there’s demand for it.

    What to Make With This

1 tbsp of this syrup, stirred into whisked matcha and topped with milk, is the Apple Matcha Latte. 2 tbsp, stirred into hot espresso before adding steamed milk, makes a plain apple latte.

    FAQ

How is this different from your Apple Crisp Syrup?

That one has a whole cinnamon stick and nutmeg cooked into it — a baked-crumble flavor. This syrup has no spice at all, just reduced apple cider and sugar, for pairings that want plain apple instead of a dessert-spice blend.

Is apple cider the same as apple juice here?

No, and it matters. Cider is unfiltered and more tart and full-bodied, which gives the reduction real apple character once it’s cooked down. Clear, filtered apple juice tastes thinner and sweeter after reducing.

Do I need to make this every time I want a drink?

No — one batch keeps about 2 weeks in the fridge and covers roughly 12 drinks. The Apple Matcha Latte recipe assumes you already have a jar of this on hand.
