Apple Cider Donut Syrup
Ingredients & steps
StandardIngredients
- 2 cups apple cider (unfiltered, not apple juice)
- 3/4 cup granulated white sugar
- 1 1/2 tsp ground cinnamon
- 2 tbsp unsalted butter
- 1/4 tsp vanilla extract
- Pinch of fine sea salt
Steps
- 1.Combine the apple cider, granulated sugar, and cinnamon in a medium saucepan over medium heat, stirring until the sugar dissolves.
- 2.Bring to a simmer and cook, uncovered, 25-30 minutes, stirring occasionally, until reduced by roughly half and syrupy enough to coat the back of a spoon.
- 3.Remove from heat and whisk in the butter a tablespoon at a time until fully melted and glossy -- this is the step that gives it a glazed-donut richness instead of a thin fruit syrup.
- 4.Stir in the vanilla extract and salt. Let cool completely -- it thickens further as it cools.
- 5.Store in a sealed jar in the fridge for up to 1 week (shorter than most of this site's syrups, since real butter is emulsified in). Give it a shake or stir before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Apple Cider Donut Latte — a real café-visit find, not a chain-menu copycat. It’s built from real apple cider, the same starting point as our Apple Crisp Syrup, but everything from there is different on purpose: white sugar instead of brown, real butter whisked in at the end, and a cinnamon ratio that reads as cinnamon-sugar glaze rather than baked-crumble spice.
Why This Isn’t Just the Apple Crisp Syrup Again
Three apple-cider-based items now live on this site, and it’s worth being specific about how they differ instead of letting them blur together:
- Vs. our Apple Crisp Syrup: that one reduces cider with brown sugar, a whole cinnamon stick, and nutmeg — a baked-crumble, caramel-apple flavor. This syrup uses white sugar (no molasses note), a lighter two-spice profile (just cinnamon, no nutmeg), and real butter whisked in at the end, which neither Apple Crisp Syrup nor the Chai-Spiced Apple Cider Latte’s syrup includes. That butter is what pushes this toward “glazed cake donut” instead of “oven dessert.”
- Vs. the Chai-Spiced Apple Cider Latte: that drink is a brewed chai spice tea (black tea, cardamom, cloves, ginger, peppercorns) with cider stirred in — no coffee required in its base form, and no cinnamon-sugar-donut character at all. This syrup has no tea in it anywhere.
The Syrup
Combine 2 cups apple cider, 3/4 cup granulated sugar, and 1 1/2 tsp ground cinnamon in a saucepan over medium heat, stirring until the sugar dissolves. Simmer uncovered for 25-30 minutes until reduced by about half and syrupy. Off the heat, whisk in 2 tbsp butter a tablespoon at a time until glossy and fully melted — this emulsified butter is the one step that makes it taste like a glazed donut instead of a plain fruit reduction. Finish with 1/4 tsp vanilla and a pinch of salt, then cool completely.
Assumptions: real apple cider and granulated sugar at typical fall grocery pricing, unsalted butter at this site’s standard $0.14/tbsp rate (same figure our Butterscotch and Brown Butter Toffee syrups use), Costco-size vanilla extract. Real butter is what makes this keep a week instead of two — see Storage below.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — shorter than our plain cider-and-sugar reductions, because this one has real butter emulsified in.
- Give it a shake or stir before every use — the butter can separate slightly as it sits; that’s normal.
- Double the batch if you go through these quickly, but plan around the shorter week-long window rather than making a giant batch.
Swaps & Notes
- No real cider on hand? Unfiltered apple juice works in a pinch, though thinner and sweeter — same caveat as our Apple Crisp Syrup.
- Want the full café-visit pairing? See our Plating Your Homemade Coffee Like a Café guide for the cinnamon-sugar rim and mini-donut-on-the-saucer pairing this syrup was built alongside.
- Watching sugar? This one’s Standard-tier only right now — a Sugar-Free or Ingredient-Honest version may follow later.
- Want plain apple with no spice or butter? See Apple Syrup — same real-cider base, nothing else added.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso before adding steamed milk, is the Apple Cider Donut Latte.

FAQ
Is this the same flavor as your Apple Crisp Syrup?
No — different sugar (white, not brown), a lighter spice ratio, and real butter whisked in at the end, which Apple Crisp Syrup doesn’t use at all. That butter step is what gives this one a glazed-donut character instead of a baked-crumble one.
Why does this only keep a week instead of two?
Real butter is emulsified into the syrup, and butter-containing mixtures don’t hold up in the fridge as long as a plain sugar-and-cider reduction. A week in a sealed jar is the safe window — same reasoning as our Butterscotch Syrup.
Do I need to make this every time I want the latte?
No — one batch covers about 12 drinks. The Apple Cider Donut Latte recipe assumes you already have a jar on hand.
