- 3/4 cup pure maple syrup
- 1/4 cup water
- Pinch of fine sea salt
- 1/2 tsp vanilla extract
Steps
- 1.Whisk the cocoa powder into the water and maple syrup together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
- 2.Set over medium heat and bring to a gentle simmer, whisking constantly -- cocoa scorches easily on the bottom of the pan if left alone.
- 3.Simmer 4-5 minutes, still whisking occasionally, until smooth and slightly thickened.
- 4.Remove from heat and stir in the salt and vanilla extract. Let cool completely.
- 5.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

What “Clean-Ingredient” Means Here
Cocoa powder and maple syrup, plus a splash of water to keep it pourable. No refined cane sugar, nothing you’d need a label to identify. It’s not a “diet” version like our Sugar-Free tier — it’s a rebuilt-from-real-food version, and it lands a bit higher in calories than the Standard sauce, since maple syrup isn’t meaningfully lower-calorie than cane sugar. The upgrade here is ingredient sourcing, not a nutrition hack.
The Sauce
Whisk the cocoa powder into the water and maple syrup together before turning on the heat — cocoa clumps badly if you dump it into hot liquid, same rule as the Standard sauce. Set over medium heat and simmer 4-5 minutes, whisking often so it doesn’t scorch. Off the heat, stir in a pinch of salt and 1/2 tsp vanilla extract, then let it cool completely.

Storage & Shelf Life

Is this actually lower in sugar than the Standard mocha sauce?
