Ingredients & steps
Sugar-FreeIngredients
- 1 cup water
- 1 cup granulated monk fruit or allulose sweetener
- 2 tsp banana extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp vanilla extract
Steps
- 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
- 2.Whisk in the ground cinnamon and nutmeg and bring to a gentle simmer for 2-3 minutes, whisking occasionally so the spices don't clump at the bottom of the pan.
- 3.Remove from heat and stir in the banana extract and vanilla extract. Let cool completely.
- 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. This is the syrup batch behind our Sugar-Free Banana Bread Latte — the same method as our Standard banana bread syrup, with a monk fruit or allulose sweetener standing in for the brown sugar. Banana extract and warm baking spice carry the flavor either way, and like the Standard version, this one uses extract rather than real banana so it keeps a full 2 weeks instead of a few days — see the Maple Banana Bread Syrup if you want the real-fruit, shorter-shelf-life version instead.
The Syrup
Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — sugar-free sweeteners can take a little longer than brown sugar, so don’t rush this step. Whisk in 1 tsp ground cinnamon and 1/4 tsp ground nutmeg and bring to a gentle simmer for 2-3 minutes, whisking now and then so the spices don’t clump. Off the heat, stir in 2 tsp banana extract and 1/2 tsp vanilla extract and let it cool completely.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Assumptions: monk fruit/allulose sweetener at typical grocery pricing (~$3/cup at bulk-bag pricing) and banana extract, which — like the Standard syrup — costs more per teaspoon than Costco-size vanilla since it isn’t usually sold in bulk. That’s most of why this is one of the pricier sugar-free syrups on the site per serving; your numbers shift a little with which sweetener brand you use.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup — banana extract instead of real fruit means no shortened shelf-life tradeoff here.
- Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does — gently reheat the jar in a warm water bath to re-dissolve before using.
- Double the batch if you go through banana bread lattes quickly — everything scales evenly.
Sweetener Notes
- Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here — the easiest substitution if this is your first sugar-free syrup.
- Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste, since stevia can read as slightly bitter at higher concentrations.
- This same base method — swap the flavor extract — is the foundation of every other sugar-free syrup on the site, including Sugar-Free Hazelnut Syrup and Sugar-Free Vanilla Syrup.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso before adding milk, is the Sugar-Free Banana Bread Latte. If sugar content isn’t your main concern, the Banana Bread Syrup uses the same method with brown sugar, or the Maple Banana Bread Syrup behind our Ingredient-Honest tier swaps in real mashed banana and real maple syrup instead.

FAQ
Can I buy a sugar-free banana bread syrup instead of making it?
If a chain or grocery brand carries one, sure — but as a newer flavor it may not be widely stocked yet, and this homemade version costs a fraction of the per-pump price regardless.
Do I need to make this every time I want a latte?
No — make one batch and it covers about 12 drinks over two weeks. The Sugar-Free Banana Bread Latte recipe assumes you already have a jar on hand.
Why extract instead of real banana, if this is already the sugar-free tier?
Real mashed banana browns and starts to ferment within days regardless of how much sugar is in the recipe — the shelf-life problem is about the fruit, not the sweetener. Extract keeps this batch usable for the full 2 weeks; the real-fruit version lives in the Maple Banana Bread Syrup with an honest note on its shorter window.
