    Ingredients & steps

    Ingredient-Honest

    Ingredients

    • 1 medium very ripe banana (the more brown-speckled, the better)
    • 1/2 cup pure maple syrup
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • 1/2 tsp lemon juice
    • 1/2 tsp vanilla extract

    Steps

    1. 1.Mash the ripe banana in a small saucepan until mostly smooth -- a few small lumps are fine, they'll cook down.
    2. 2.Add the maple syrup, cinnamon, and nutmeg and warm over medium-low heat, stirring, for 2-3 minutes -- just enough to blend everything smoothly and take the raw edge off the banana. This isn't a simmer-down-and-thicken step like a compote; you're aiming for combined and warm, not reduced.
    3. 3.Remove from heat and stir in the lemon juice (slows browning) and vanilla extract. Let cool completely.
    4. 4.Store in a sealed jar in the fridge and use within about 5 days -- see the Storage & Shelf Life section below for why. Give it a stir before each use, since the banana settles. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Ingredient-Honest Banana Bread Latte — real mashed banana and real maple syrup in place of the banana extract and brown sugar our Standard and Sugar-Free tiers use. It’s the most whole-ingredient version of this new fall-2026 flavor, and it’s also the one with a real tradeoff worth knowing about before you make a full batch.

Real Banana vs. Banana Extract: The Honest Tradeoff

Every other syrup on the site keeps about 2 weeks in the fridge. This one doesn’t, and that’s specifically because of the fresh banana: mashed banana starts browning and picking up a fermented edge within days, refrigerated or not, in a way that maple syrup, sugar syrups, and dairy-based syrups don’t. Briefly warming it with the maple syrup and a splash of lemon juice slows that down some, but it doesn’t stop it — this batch is meant to be used within about 5 days, not treated like our other ingredient-honest syrups.

That’s exactly why our Standard and Sugar-Free tiers use banana extract instead: it gets you the same “banana bread” flavor without the fruit’s shelf-life problem. If you want the real-food version and are fine making smaller, more frequent batches, this is that recipe. If a 2-week jar you don’t think about matters more to you than avoiding extract, the Standard or Sugar-Free syrup is the better fit.

    The Syrup

Mash 1 medium very ripe banana (more brown speckling means more sugar has converted and more flavor — don’t reach for an underripe one) in a small saucepan until mostly smooth. Add 1/2 cup pure maple syrup, 1/2 tsp ground cinnamon, and 1/4 tsp ground nutmeg, and warm the mixture over medium-low heat for 2-3 minutes, stirring — you’re blending and taking the raw-banana edge off, not cooking it down into a compote. Off the heat, stir in 1/2 tsp lemon juice (it slows browning) and 1/2 tsp vanilla extract, then let it cool completely.

Store the finished syrup in a sealed jar in the fridge and plan to use it within about 5 days. It makes roughly 8 drinks’ worth at 2 tbsp per serving.

    Batch Cost, Real-Fruit Version
    This batch (8 servings)$3.21 total
    Per 2 tbsp serving~$0.40

Assumptions: one ripe banana at typical grocery pricing (~$0.25 each) and real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle) — maple syrup is most of the cost here, same as it is in our other maple-based ingredient-honest syrups. See the Ingredient-Honest Banana Bread Latte for the full per-drink math against café pricing.

    Storage & Shelf Life

    • Use within about 5 days, kept in a sealed jar in the fridge — noticeably shorter than the site’s other ingredient-honest syrups (which typically keep 1-2 weeks), because fresh banana oxidizes and ferments faster than canned pumpkin, maple alone, or a butter-based syrup does, even after the brief warming step.
    • Make a smaller batch on purpose if you won’t get through 8 servings in 5 days — halve every ingredient (1/2 banana, 1/4 cup maple syrup, and so on) rather than letting a full batch sit past its window.
    • Give it a stir before every use, not just the first — the banana solids settle, and a stir brings it back to a pourable consistency.
    • Watch for a stronger fermented smell or noticeable graying past day 5 — either is your sign to toss it rather than push the window.

    Swaps & Notes

    • Want a stronger banana flavor without more banana? A drop or two of banana extract stirred in alongside the vanilla boosts the flavor without changing the fruit content or the shelf-life math much.
    • Honey works in place of maple syrup at a similar cost, with a more floral note than maple’s caramel-like flavor.
    • This isn’t a lower-calorie or lower-sugar swap versus the Standard tier — real banana and real maple carry meaningful natural sugar of their own. The point of this tier is whole, real-food ingredients, not fewer calories. If that’s your priority instead, see the Sugar-Free Banana Bread Syrup.

    What to Make With This

2 tbsp of this syrup, stirred into hot espresso before adding steamed whole milk, is the Ingredient-Honest Banana Bread Latte — our top-recommended banana bread tier. If cost and a longer shelf life matter more than real fruit, the Banana Bread Syrup uses banana extract and keeps two weeks; if minimizing sugar is the priority, see the Sugar-Free Banana Bread Syrup.

    FAQ

Why does this syrup only keep 5 days when the Standard version keeps 2 weeks?

The Standard and Sugar-Free syrups use banana extract, which doesn’t spoil the way fresh fruit does. This version uses real mashed banana, which starts browning and fermenting within days in the fridge regardless of how it’s prepared — that’s a property of the fruit, not something the recipe method can fully prevent.

Can I extend the shelf life somehow?

Freezing the finished syrup in an ice cube tray (2 tbsp per cube) is the best option if you want to make a bigger batch and stretch it past 5 days — thaw one cube at a time. We haven’t tested it past a couple weeks frozen, so treat that as a reasonable extension, not an indefinite one.

Do I need to make this every time I want a latte?

Closer to “every few days” than every couple of weeks, honestly — that’s the real tradeoff of this tier. One batch covers about 8 drinks; the Ingredient-Honest Banana Bread Latte recipe assumes you already have a jar on hand.
