  • 3/4 cup pure maple syrup
  • 6 green cardamom pods, lightly crushed
  • 1/4 tsp food-grade culinary rosewater (start here -- up to 1/2 tsp max. Never rose essential oil -- see the Standard syrup's safety note)

Steps

  1. 1.Warm the maple syrup and crushed cardamom pods together in a small saucepan over low heat until just warm to the touch -- don't let it simmer or boil. You're gently helping the cardamom release its oils, not cooking the syrup down.
  2. 2.Remove from heat, cover, and let steep for 15 minutes.
  3. 3.Strain out the cardamom pods through a fine-mesh strainer.
  4. 4.Once the syrup has cooled to warm (not hot), stir in 1/4 tsp rosewater -- adding it off the heat protects its delicate aroma. Taste and add up to 1/4 tsp more only if you want a stronger rose note.
  5. 5.Let cool completely. Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Cardamom Rose Latte – real maple syrup standing in for the cane-sugar syrup our Standard tier uses, with the same cardamom pods and conservative rosewater dose steeped directly into it instead of into sugar water. It’s the same technique our Lavender-Maple Syrup and Maple Cinnamon Dolce Syrup use: warm the maple gently, steep the real ingredients into it, strain.

What “Clean-Ingredient” Means Here

Three ingredients you could read off the label without a dictionary: maple syrup, cardamom pods, and culinary rosewater. No water, no dissolved granulated sugar, no gums. The dosage and safety rules don’t change with the base liquid – still 6 lightly crushed cardamom pods and 1/4 tsp rosewater to start (up to 1/2 tsp max), and still food-grade culinary rosewater only, never rose essential oil. Maple doesn’t make rosewater any more forgiving of over-dosing than sugar water does – see the Standard syrup’s “Why Less Is More” note if you haven’t read it.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
  • Strain the cardamom well – same reasoning as the other tiers: pods left in the jar keep steeping in the fridge and can push the flavor toward bitter over the full 2 weeks.
  • Double the batch if you go through cardamom rose lattes quickly – everything scales evenly (1 1/2 cups maple syrup, 12 cardamom pods, 1/2 tsp rosewater).

Swaps & Notes

  • This isn’t a lower-calorie swap. Maple syrup runs slightly higher calories per tablespoon than table sugar – the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free Cardamom Rose Syrup instead.

FAQ

Why warm the maple syrup instead of just steeping the cardamom in it cold?

Gentle warmth helps the cardamom release its aromatic oils faster, the same reason tea steeps better hot than cold. It doesn’t need to simmer or cook down – maple is already a thin, pourable liquid.

Is this lower in sugar than the Standard syrup?

Can I use rose essential oil since this version is already “cleaner”?
