Ingredients & steps
Ingredient-HonestIngredients
- 1/3 cup unsweetened cocoa powder
- 3/4 cup pure maple syrup
- 2 tbsp mascarpone cheese
- 2 tbsp strongly brewed espresso or coffee concentrate, cooled
- 1/2 tsp vanilla extract
- Pinch of fine sea salt
Steps
- 1.Whisk the cocoa powder into the maple syrup and brewed espresso together in a small saucepan BEFORE turning on the heat -- cocoa clumps badly if it hits hot liquid without being fully whisked in cold first.
- 2.Set over medium heat and bring to a gentle simmer, whisking constantly.
- 3.Simmer 4-5 minutes, still whisking occasionally, until smooth and slightly thickened.
- 4.Remove from heat and whisk in the mascarpone cheese a spoonful at a time until fully smooth.
- 5.Stir in the salt and vanilla extract. Let cool completely.
- 6.Store in a sealed jar in the fridge for up to 1 week (real mascarpone is dairy). Give it a whisk or shake before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.
This is the Ingredient-Honest half of our Tiramisu Sauce family — real maple syrup in place of cane sugar, real brewed espresso in place of instant espresso powder, and the same real mascarpone and cocoa as the other two tiers.
What “Ingredient-Honest” Means Here
Two swaps separate this from the Standard sauce: real maple syrup instead of refined cane sugar, and real strongly-brewed espresso instead of instant espresso powder — an ingredient you could brew yourself rather than a processed jar. What it doesn’t do: lower the calories. Maple syrup runs a similar calorie load to cane sugar, and real mascarpone contributes the same either way — this sauce actually lands higher in calories than the Standard version (102 vs. 63), the same honest pattern our other maple-based Ingredient-Honest sauces show.
The Sauce
Whisk 1/3 cup cocoa powder into 3/4 cup maple syrup and 2 tbsp cooled strongly-brewed espresso together before turning on the heat. Simmer 4-5 minutes over medium heat, whisking often so it doesn’t scorch. Off the heat, whisk in 2 tbsp mascarpone cheese until smooth, then stir in a pinch of salt and 1/2 tsp vanilla extract. Let cool completely.
Store the finished sauce in a sealed jar in the fridge for up to 1 week. It makes roughly 8 drinks’ worth at 2 tbsp per serving.
Assumptions: unsweetened cocoa powder at typical grocery pricing; real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle) — the dominant cost here; real mascarpone at typical grocery pricing (~$5/8oz tub). Brewed espresso adds essentially no extra cost since it’s made from beans you already have on hand for the drink itself.
Storage & Shelf Life
- Keeps about 1 week in a sealed jar in the fridge — real mascarpone is dairy, same shorter window as the other two tiers.
- Give it a whisk or shake before using.
Swaps & Notes
- This isn’t a lower-calorie swap. Maple syrup runs a similar calorie load to cane sugar, and it’s genuinely the priciest of the three tiramisu tiers because of it. If calories or added sugar are your main concern, see the Sugar-Free Tiramisu Sauce instead.
- No mascarpone? Full-fat cream cheese, softened, is the closest substitute.
What to Make With This
2 tbsp of this sauce, stirred into hot espresso before adding steamed milk, is the Ingredient-Honest Tiramisu Latte — our top-recommended tiramisu tier. If cost matters more than ingredient sourcing, the Tiramisu Sauce uses cane sugar and instant espresso powder; if minimizing sugar is the priority, see the Sugar-Free Tiramisu Sauce.

FAQ
Is this actually lower in sugar than the Standard sauce?
Not meaningfully — maple syrup and cane sugar carry a similar amount of sugar per serving. If sugar content specifically is your priority, see the Sugar-Free Tiramisu Sauce instead.
Why use brewed espresso instead of instant espresso powder?
It’s a whole-food swap in the same spirit as using real maple syrup instead of refined sugar — real brewed coffee instead of a processed instant powder. It’s a smaller flavor difference than the sugar swap, but it fits the tier’s ingredient philosophy.
Do I need to make this every time I want a latte?
No — one batch covers about 8 drinks over about a week.
