  • 2 tbsp pure vanilla extract
  • Optional: seeds scraped from 1 vanilla bean, for visible flecks and a rounder flavor
  • Optional: a pinch (1/8 tsp) ground turmeric, for the classic pale-yellow custard color -- cosmetic only

  1. 1.Whisk the maple syrup, cream, and vanilla extract together in a small bowl or jar until fully combined -- no cooking required, maple syrup is already a thin, pourable liquid.
  2. 2.Stir in the scraped vanilla bean seeds and turmeric now, if using.

This is the syrup behind our Clean-Ingredient French Vanilla Latte — real maple syrup standing in for the sugar-and-brown-sugar base our Standard French Vanilla Syrup uses, with the same real cream doing the custard work either way. There’s no stovetop step at all: maple syrup is already pourable, so this is a 2-minute whisk, not a simmer.

What “Clean-Ingredient” Means Here

Three ingredients you could read off a label without a dictionary: maple syrup, cream, and vanilla extract. No dissolved granulated or brown sugar, no gums, no cooking. The custard character that makes this recipe “French Vanilla” instead of plain vanilla still comes from the same place as the Standard tier — real dairy cream — only the sweetener changed.

  • Give it a shake before using if any vanilla bean seeds have settled at the bottom.
  • Double the batch if you go through these quickly — everything scales evenly (1 1/2 cups maple syrup, 4 tbsp cream, 1/4 cup vanilla extract) — the 5-7 day window doesn’t change either way.

Swaps & Notes

  • Honey works too as a whole-food swap for maple syrup, at a similar cost — it shifts the flavor slightly floral instead of maple’s caramel-like note, while the cream still carries the French Vanilla character.
  • This isn’t a lower-calorie swap. Maple syrup runs about the same per tablespoon as table sugar — the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free French Vanilla Syrup instead.

FAQ

Why no brown sugar in this version, when the Standard syrup uses it?

The Standard syrup builds its custard depth from brown sugar cooked with cream. Real maple syrup already carries that same caramel-adjacent depth on its own, so there’s nothing to add here — the cream still does the custard work, maple does the sweetening and flavor-rounding that brown sugar does in the Standard version.

Is this lower in sugar than the Standard version?

Not meaningfully — it’s a similar amount of sugar, just from maple instead of cane and brown sugar. If sugar content specifically is your priority, see the Sugar-Free French Vanilla Syrup instead.

Do I need to make this every time I want a latte?
