  • Pinch of fine sea salt

Steps

  1. 1.Combine the milk and maple syrup in a saucepan over medium-low heat. Bring to a bare simmer, then drop to low.
  2. 2.Cook, stirring occasionally (more often in the last 15 minutes to prevent sticking or scorching), for 45-60 minutes, until reduced by roughly two-thirds and thickened to a syrupy, condensed-milk consistency that coats the back of a spoon.
  3. 3.Remove from heat and stir in the vanilla extract and salt.
  4. 4.Let cool completely -- it thickens further as it cools, closer to real canned condensed milk's texture than the quicker Sugar-Free reduction gets. Store in a sealed jar in the fridge for up to 1 week. Use 2 tbsp per drink.

This is the base behind our Clean-Ingredient Spanish Latte – real homemade condensed milk, built the way condensed milk actually works: whole milk and a sweetener, reduced slowly until the water cooks off and what’s left thickens and concentrates. This version uses real maple syrup instead of white sugar, and skips the corn syrup and stabilizers a can typically carries.

What “Clean-Ingredient” Means Here

Two ingredients doing real work – whole milk and pure maple syrup – plus vanilla and a pinch of salt. No canned condensed milk, no corn syrup, no carrageenan or other stabilizers. It takes a genuine hour of mostly-hands-off simmering to get there, which is the real tradeoff against our Standard tier’s 10-minute can-opening version: this is actually slower than our Sugar-Free tier too, since it needs a deeper reduction to reach real condensed-milk thickness rather than just enough concentration to read as sweet.

The Base

Combine the milk and maple syrup in a saucepan over medium-low heat, bring to a bare simmer, then drop to low. Cook for 45-60 minutes, stirring occasionally (and more often toward the end), until it’s reduced by about two-thirds and thickened to a real condensed-milk consistency – it should coat the back of a spoon and hold a line when you drag a finger through it. Off the heat, stir in the vanilla extract and salt, then let it cool completely; it firms up further as it cools.

Maple syrup is the main added cost here, which is why this base runs the most expensive of our three tiers per serving.

Storage & Shelf Life

  • Keeps about 1 week in a sealed jar in the fridge – a fresh reduction without a can’s sugar concentration, shorter than the Standard base’s 2 weeks.
  • It firms up further in the fridge. A short stir or a few seconds in a warm water bath loosens it back up.
  • Go by texture, not the clock. Every stove runs a little differently – pull it once it genuinely coats a spoon, even if that’s a few minutes short of or past 60 minutes.

Swaps & Notes

  • Honey works in place of maple syrup at the same amount, if you’d rather have that flavor profile – expect a slightly different color and a more floral finish.
  • This is genuinely more work than our other two tiers. If an hour of occasional stirring isn’t worth it to you, the Spanish Latte Condensed Milk Base (Standard) gets you a nearly identical drink in 10 minutes from a can.

FAQ

Is this actually the same as canned condensed milk?

Close, but not identical – it’s the same basic technique (milk plus sweetener, reduced until thick), just with real maple syrup instead of refined sugar and without the corn syrup or stabilizers a can typically adds. Texture is genuinely similar; flavor carries a light maple note the canned version doesn’t have.

Why does this take so much longer than your other Spanish Latte bases?

Real condensed milk needs a deep reduction – roughly two-thirds of the starting liquid has to cook off to get true condensed-milk thickness. Our Sugar-Free base only reduces by about half, since it’s aiming for a lighter-bodied result, not a full replica.

Do I need to make this every time I want a latte?

No – one batch covers about 8 drinks over a week. The Clean-Ingredient Spanish Latte recipe assumes you already have a jar on hand.
