  • 1 cup (about 6oz) chopped real white chocolate baking bar (fewer stabilizers/fillers than mass-market chips -- check the ingredient list for cocoa butter as the main fat, not palm oil)
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 tbsp pure maple syrup
  • Pinch of fine sea salt
  • 1/2 tsp vanilla extract

Steps

  1. 1.Warm the heavy cream, whole milk, and maple syrup together in a small saucepan over medium-low heat until steaming, not boiling.
  2. 2.Remove from heat and add the chopped white chocolate. Let it sit 1-2 minutes to soften, then whisk until smooth and glossy.
  3. 3.Stir in the salt and vanilla extract. Let cool completely.
  4. 4.Store in a sealed jar in the fridge for up to about 1 week (fresh-cream sauce, same shorter shelf life as the Standard version). Give it a stir before using. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the sauce behind our Clean-Ingredient White Mocha – and, like our Clean-Ingredient Caramel, we want to be upfront that this is a smaller upgrade than our Clean-Ingredient Vanilla or Mocha recipes.

An Honest Note Before You Make This

White chocolate is inherently a processed, sugar-heavy ingredient, even at its best. Real white chocolate – the kind made from cocoa butter, milk solids, and sugar, with no palm oil or artificial vanillin – is still roughly half sugar by weight. There’s no whole-food version of white chocolate the way real pumpkin or real cocoa are whole foods; the sugar isn’t an add-on you can swap out, it’s structurally part of what white chocolate is. So this tier doesn’t rebuild the sauce from scratch the way our Clean-Ingredient Pumpkin or Mocha recipes do. What it does instead: swaps mass-market white chocolate chips (which often include palm oil and soy lecithin as stabilizers, plus artificial vanillin) for a real baking bar with a shorter, more recognizable ingredient list, and adds a little real maple syrup for extra depth in place of a bit of the chocolate’s own sugar. That’s a real, if modest, upgrade in sourcing – not a nutrition win. It actually runs a little higher in calories per serving than the Standard sauce (121 vs. 113), because we’re adding maple syrup on top of the chocolate’s own sugar rather than replacing it.

The Sauce

Warm the cream, milk, and maple syrup together over medium-low heat just until steaming. Off the heat, add the chopped white chocolate and let it sit a minute or two before whisking smooth and glossy. Finish with a pinch of salt and 1/2 tsp vanilla extract, then let it cool completely.

Store the finished sauce in a sealed jar in the fridge for about a week. It makes roughly 12 drinks’ worth at 2 tbsp per serving.

  • Reading labels matters more here than the “clean-ingredient” name suggests – look for a bar listing cocoa butter (not palm oil or vegetable fat) as the primary fat, and real vanilla or vanilla extract rather than “vanillin” or artificial flavoring.
