Ingredients

  • 2 cups whole milk
  • 1/3 cup granulated allulose or an allulose/monk fruit blend
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Steps

  1. 1.Combine the milk and allulose in a small saucepan over medium-low heat. Bring to a bare simmer, then drop to low.
  2. 2.Cook, stirring occasionally to prevent scorching, for 30-35 minutes, until reduced by roughly half and thickened to a texture closer to condensed milk than milk.
  3. 3.Watch it closely in the last 10 minutes -- once most of the water has cooked off, it can go from 'not thick enough' to 'scorched' fast.
  4. 4.Remove from heat and stir in the vanilla extract and salt.
  5. 5.Let cool completely -- it thickens further as it cools. Store in a sealed jar in the fridge for up to 1 week (a fresh dairy reduction, without condensed milk's concentrated sugar to help preserve it -- shorter than the Standard base's 2 weeks). Use 2 tbsp per drink.

An Honest Note Before You Make This

There’s no reliable, genuinely authentic sugar-free sweetened condensed milk sitting on a grocery shelf the way there’s a real sugar-free caramel or vanilla syrup. Condensed milk gets its flavor, color, and thick texture from milk solids slowly concentrated alongside a large amount of sugar – sugar that also does real preservation and browning work, not just sweetening. Swap out the sugar for a sugar-free sweetener and you lose some of that: allulose browns a little (more than erythritol or monk fruit alone), but this reduction won’t get quite as deeply caramelized or as thick as a can of the real thing. So rather than pretend a shortcut exists, this recipe builds the effect from scratch – slowly reducing whole milk with a sugar-free sweetener until it concentrates and thickens, the actual technique real condensed milk is built on, just without the added sugar doing the heavy lifting.

The Base

  • Don’t rush the reduction. Go by texture, not just time – pull it once it visibly coats the back of a spoon.

An Honest Note on Texture and Depth

Cutting the sugar here genuinely cuts the calories, which isn’t always true of our sugar-free syrups (see the Irish Cream family). What it doesn’t fully deliver is the exact texture and flavor depth of real condensed milk: this reduction is thinner and lighter in color than a can of the real thing, with a cleaner dairy sweetness instead of condensed milk’s slightly caramelized, cooked-sugar depth. It’s a genuinely good sugar-free coffee sweetener – it’s just not a perfect stand-in for the can, and we’d rather say that than oversell it.

Genuinely both, for once. Because this base is just reduced milk (no added cream or butter, unlike our Sugar-Free Irish Cream Syrup), the calories drop right along with the sugar – 38 cal/serving here versus 123 for the Standard base.

Can I use monk fruit or erythritol instead of allulose?

Yes, though allulose browns slightly more during the reduction, which gets you a touch closer to condensed milk’s color and depth. Any granulated sugar-free sweetener will work; adjust sweetness to taste.
