Ingredients & steps
Ingredient-HonestIngredients
- 3/4 cup pure maple syrup
- 1 tbsp ground cinnamon
- 1/2 tsp vanilla extract
- Pinch of fine sea salt
Steps
- 1.Whisk the maple syrup, ground cinnamon, vanilla extract, and salt together in a small bowl or jar until fully combined -- no cooking required, maple syrup is already a thin, pourable liquid.
- 2.Store in a sealed jar in the fridge for up to 2 weeks. Give it a shake or stir before using -- cinnamon can settle. Use 2 tbsp per drink, stirred into cold brew or hot espresso before adding milk.
Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.
This is the syrup behind our Ingredient-Honest Iced Churro Latte — real maple syrup standing in for the brown-and-cane-sugar blend our Standard Churro Syrup uses, with the same heavy cinnamon ratio either way. There’s no stovetop step at all: maple syrup is already a thin, pourable liquid, so this is a 2-minute whisk, not a simmer — the same shortcut our Eggnog-Maple Syrup uses.
What “Ingredient-Honest” Means Here
Two ingredients doing all the work: real maple syrup and real ground cinnamon, plus a touch of vanilla and salt to round it out. No refined cane sugar, no butter extract, no cream of tartar — just the same heavy cinnamon ratio (1 full tablespoon) that separates Churro from this site’s other three cinnamon syrups, now carried by maple instead of brown sugar. We’re just as upfront about where this tier doesn’t win: calories and total sugar land close to the Standard version, because maple syrup isn’t meaningfully lower in either. The upgrade here is ingredient sourcing, not a nutrition hack.
The Syrup
Whisk 3/4 cup pure maple syrup, 1 tbsp ground cinnamon, 1/2 tsp vanilla extract, and a pinch of salt together in a small bowl or jar until fully combined. That’s it — no heat needed.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 10 drinks’ worth at 2 tbsp per serving.
Assumptions: real maple syrup at typical grocery pricing (~$8-9 for a 12oz bottle, the same figure our Eggnog-Maple and Pumpkin-Maple bases use) and ground cinnamon at the same per-tsp rate the Standard syrup uses. Maple syrup is almost the entire cost of this batch — it’s also why this tier costs more per drink than the Standard or Sugar-Free churro syrups.
Why This Costs More Than the Other Two Tiers (and Why That’s Fine)
Being straight about the math: this version saves less per drink than either the Standard or Sugar-Free syrup, because real maple syrup costs more per tablespoon than brown sugar or a sugar-free sweetener. It’s also not lower in calories or added sugar than the Standard version — maple runs about the same per tablespoon as cane sugar. What you’re paying the premium for is ingredient sourcing: no refined sugar, nothing you couldn’t name out loud. See the Ingredient-Honest Iced Churro Latte for the full per-drink math against café pricing.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge.
- Give it a shake before using if any cinnamon has settled at the bottom of the jar.
- Double the batch if you go through churro drinks quickly — everything scales evenly (1 1/2 cups maple syrup, 2 tbsp cinnamon, 1 tsp vanilla).
Swaps & Notes
- Honey works too as a whole-food swap for maple syrup, at a similar cost — it shifts the flavor toward floral and away from maple’s caramel-like note, which is a bigger departure here than in some of our other maple syrups, since maple’s caramel note is doing real work alongside the cinnamon.
- This isn’t a lower-calorie swap. Maple syrup runs about the same calories per tablespoon as table sugar — the point of this tier is real, whole-food ingredients, not fewer calories. If calories or added sugar are your main concern, see the Sugar-Free Churro Syrup instead.
- Want the rim garnish? See the Standard Churro Syrup for the cinnamon-sugar rim method — it’s the same optional step regardless of which syrup tier you’re using, and it isn’t counted in any tier’s cost or calorie math.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso or cold brew, is the Ingredient-Honest Iced Churro Latte — our top-recommended churro tier. If cost matters more than ingredient sourcing, the Churro Syrup uses the same heavy cinnamon ratio with brown sugar; if minimizing sugar is the priority, see the Sugar-Free Churro Syrup.

FAQ
Why no water or simmer step in this version, when the Standard syrup uses one?
The Standard syrup dissolves brown and granulated sugar into water and briefly simmers to bloom the cinnamon. Maple syrup is already pourable on its own, so there’s nothing to dissolve — the whisking step here does the same job of distributing the cinnamon evenly, just without heat.
Is this lower in sugar than the Standard syrup?
Not meaningfully — it’s a similar amount of sugar, just from maple instead of brown/cane sugar. If sugar content specifically is your priority, see the Sugar-Free Churro Syrup instead, which is built to minimize it.
Do I need to make this every time I want a latte?
No — one batch covers about 10 drinks over two weeks. The Ingredient-Honest Iced Churro Latte recipe assumes you already have a jar on hand.
