Ingredients & steps
Sugar-FreeIngredients
- 1 cup water
- 1 cup granulated monk fruit or allulose sweetener
- 1 tbsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/8 tsp fine sea salt
Steps
- 1.Combine the water and monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until fully dissolved -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
- 2.Whisk in the ground cinnamon and bring to a gentle simmer for 2-3 minutes, whisking occasionally so it doesn't clump.
- 3.Remove from heat and stir in the vanilla extract and salt. Let cool completely.
- 4.Store in a sealed jar in the fridge for up to 2 weeks. Give it a shake before using. Use 2 tbsp per drink, stirred into cold brew or hot espresso before adding milk.

This is the syrup behind our Sugar-Free Iced Churro Latte — the same method as our Standard Churro Syrup, with a monk fruit or allulose sweetener standing in for the brown and cane sugar. The heavy cinnamon ratio (1 full tablespoon) carries the flavor either way — see the Standard syrup for exactly why this is a more cinnamon-forward syrup than Cinnamon Toast, Cinnamon Vanilla, or Snickerdoodle.
The Syrup
Combine 1 cup water and 1 cup granulated monk fruit or allulose sweetener in a small saucepan over medium heat, stirring until it fully dissolves — sugar-free sweeteners can take a little longer than plain sugar, so don’t rush this step. Whisk in 1 tbsp ground cinnamon and bring it to a gentle simmer for 2-3 minutes. Off the heat, stir in 1/2 tsp vanilla extract and 1/8 tsp salt, and let it cool completely.
Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
Assumptions: monk fruit/allulose sweetener at typical grocery pricing (~$3/cup at bulk-bag pricing, same sourcing as our other sugar-free syrups) and ground cinnamon at the same per-tsp rate the Standard syrup uses. The sweetener is pricier per cup than brown/cane sugar, which is why this version costs more per drink than Standard despite the same method — but it’s still a fraction of what the Maple tier runs.
Storage & Shelf Life
- Keeps about 2 weeks in a sealed jar in the fridge, same as the Standard syrup.
- Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does — gently reheat the jar in a warm water bath to re-dissolve before using.
- Double the batch if you go through churro drinks quickly — everything scales evenly.
Sweetener Notes
- Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here — the easiest substitution if this is your first sugar-free syrup.
- Stevia works but is far more concentrated — use a fraction of the amount and adjust to taste.
- This same base method — swap the sweetener, keep the ratio — is the foundation of every other sugar-free syrup on the site, including Sugar-Free Cinnamon Vanilla Syrup and Sugar-Free Snickerdoodle Syrup.
What to Make With This
2 tbsp of this syrup, stirred into hot espresso or cold brew, is the Sugar-Free Iced Churro Latte. If sugar content isn’t your main concern, the Churro Syrup uses the same heavy cinnamon ratio with brown sugar, or the Maple Churro Syrup behind our Ingredient-Honest tier swaps in real maple instead.

FAQ
Do I need to make this every time I want a latte?
No — make one batch and it covers about 12 drinks over two weeks. The Sugar-Free Iced Churro Latte recipe assumes you already have a jar on hand.
Does monk fruit or allulose change the taste?
Slightly — both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The heavy cinnamon ratio still carries most of the flavor either way.
Is this the sugar-free version of Cinnamon Toast, Cinnamon Vanilla, or Snickerdoodle?
No — it’s a separate, fourth flavor family, built around a much heavier cinnamon ratio and brown sugar (swapped for sweetener here) instead of white sugar or a vanilla-forward base. See the Standard Churro Syrup for the full comparison against all three.
