Steps

  1. 1.Combine the brown sugar and water in a small saucepan over medium heat, stirring until the sugar fully dissolves, about 3-4 minutes.
  2. 2.Bring to a brief simmer for 1 minute, then remove from heat. Stir in a pinch of salt if using -- it's optional, but rounds out the sweetness slightly.

  4. 4.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup batch behind our Brown Sugar Latte — pulled out into its own recipe so you can make it once and go straight to assembling drinks for the next couple of weeks. It’s also the most honest recipe on this site: real brown sugar dissolved in water is the flavor. There’s no extract to add, no spice blend to reverse-engineer – brown sugar already carries its own molasses-forward taste straight out of the bag.

The Syrup

Combine 1 cup packed brown sugar (light or dark – light is what most chains use, and what we default to here) and 1 cup water in a small saucepan over medium heat, stirring until the sugar fully dissolves, about 3-4 minutes. Bring it to a brief simmer for a minute, then take it off the heat. A pinch of salt is optional but rounds out the sweetness slightly, the same way it does in our caramel syrup. Let it cool completely.

Store the finished syrup in a sealed jar in the fridge for up to 2 weeks. It makes roughly 12 drinks’ worth at 2 tbsp per serving.
