    Butterscotch Cold Foam

    The BYOB Team5 min1 drink topping (about 1/2 cup foam)~$0.79/topping (heavy cream + a portion of Butterscotch Syrup)339 cal/serving

Uses Butterscotch Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

    Ingredients & steps

    Standard

    Ingredients

    • 1/3 cup (about 2.7oz) cold heavy cream (36%+ milkfat -- labeled "heavy whipping cream," not just "whipping cream")
    • 1 tbsp Butterscotch Syrup (make a batch ahead of time -- it keeps about 1 week in the fridge)

    Steps

    1. 1.Make sure the heavy cream is well-chilled -- straight from the fridge. Cold cream whips faster and holds a more stable foam.
    2. 2.Combine the cold heavy cream and butterscotch syrup in a tall, narrow jar or cup. If the syrup has separated slightly (real butter and cream can, in the fridge), give it a shake first.
    3. 3.Froth with a handheld milk frother for 30-45 seconds, or blend in a blender on high for 15-20 seconds, or seal in a jar and shake vigorously for 45-60 seconds -- stop once it thickens into a pourable, softly mounded foam, genuinely golden in color from the real butterscotch, not whipped cream white.
    4. 4.Spoon or pour the foam over the top of your own iced coffee or cold brew -- it floats on top rather than mixing in, because it's less dense than the drink underneath.
    5. 5.Serve immediately for the best texture. It holds its float for 10-15 minutes before starting to settle into the drink.

This is our standard cold foam base technique with real Butterscotch Syrup whipped in — a topping, not a drink on its own, built for our Butter Beer Coffee and usable on any iced coffee or cold brew you already make.

Why This One Actually Looks Golden

Every other cold foam on this site tints only lightly, if at all, from its syrup — a pumpkin or churro syrup is a small fraction of the mix against plain white cream. Butterscotch Syrup is darker and more concentrated (real browned butter and brown sugar, cooked together, not a thin sugar-water syrup), so this foam comes out a genuinely visible pale gold instead of cream-white with a hint of flavor. That’s the real mechanism behind Butter Beer Coffee’s “golden frothy top” — a real ingredient color, not food coloring.

    The Technique

Combine 1/3 cup cold heavy cream and 1 tbsp Butterscotch Syrup in a tall, narrow container, then whip it one of three ways:

    • Handheld milk frother wand: 30-45 seconds.
    • Blender: 15-20 seconds on high.
    • Shake by hand: seal in a jar and shake vigorously for 45-60 seconds.

Stop as soon as it’s thickened into a soft, pourable foam that mounds slightly — past that point it starts turning into stiff whipped cream, which won’t float and pour the same way.

Café Cold Foam Add-On vs. Home Version
Café cold foam add-on (topping charge only)~$0.95
    Home butterscotch cold foam~$0.79
    Savings per topping$0.16

Assumptions: standard grocery-pricing heavy whipping cream (~$4.29/pint) and our own Butterscotch Syrup batch cost. See the Butter Beer Coffee recipe for the full drink-level savings math.

    Real Stability Notes

    • Cold cream whips faster and holds better than room-temperature cream.
    • Give the syrup a shake first if it’s separated in the fridge — real butter and cream can do this, same as the plain syrup.
    • Best made fresh — holds its floating layer about 10-15 minutes before settling in.
    • Don’t over-whip past the soft-foam stage.

    FAQ

Why is this foam actually golden instead of just white cream?

Butterscotch Syrup is a dark, concentrated real butter-and-brown-sugar cook, not a thin sugar-water syrup like most of our other flavors — there’s enough of it relative to the cream to visibly tint the whole foam a pale gold.

Does this use the same syrup as the Butterscotch Latte?

Yes — same Butterscotch Syrup, whipped into cream here instead of stirred into espresso. One batch covers both uses.

Can I use this on a drink other than Butter Beer Coffee?

Yes — spoon or pour it over any iced coffee or cold brew you already have, the same way you would a store-bought cold foam.
