Steps

  1. 1.Combine the milk, allulose, and baking soda in a heavy-bottomed saucepan over low-medium heat.
  2. 2.Bring to a gentle simmer -- not a boil -- stirring occasionally to keep the bottom from scorching.
  3. 3.Let it simmer 45-60 minutes, stirring more frequently toward the end as it thickens and reduces by roughly half. It's done when it coats the back of a spoon and looks like a thin, pourable condensed milk.
  4. 4.Watch closely in the final 10-15 minutes -- reduced milk goes from 'not thick enough' to 'scorched' faster than you'd expect.
  5. 5.Let cool completely -- it thickens noticeably more as it cools, closer to real condensed milk's texture. Store in a sealed jar in the fridge for up to 1 week (shorter than the canned Standard version, since this is fresh reduced dairy, not shelf-stable).

This is the syrup behind our Sugar-Free Vietnamese Iced Coffee. Real sugar-free sweetened condensed milk is hard to find on ordinary grocery shelves, so instead of chasing a specialty product, this version is homemade: whole milk, slowly reduced with allulose until it thickens into a pourable, condensed-milk-like syrup.

The Syrup

Combine 2 cups whole milk, 1 cup granulated allulose, and 1/4 tsp baking soda in a heavy-bottomed saucepan over low-medium heat. Bring it to a gentle simmer — not a boil — and let it reduce for 45-60 minutes, stirring occasionally at first and more often toward the end as it thickens. It’s ready when it coats the back of a spoon and looks like a thin, pourable condensed milk; it thickens further as it cools.   • Why baking soda? A small pinch helps keep the milk proteins from browning or curdling too fast during the long simmer. It’s optional – the syrup works without it, just watch the heat a little more carefully.

Can I use a sugar-free condensed milk product instead of making this?

If you can find one reliably and affordably, sure – but sugar-free sweetened condensed milk isn’t a common shelf item at most grocery stores, which is exactly why this recipe exists as a homemade stand-in.

Why does this take an hour when the Standard version takes two minutes?

Because it’s an actual recipe – real milk reduced on the stovetop – instead of a canned product you’re just portioning out. Most of that hour is hands-off simmering, not active work.

Is this really lower in calories, or just lower in sugar?
