Ingredients

  • 4 cups water
  • 8 black tea bags (or 3 tbsp loose-leaf black tea, e.g. Assam)
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • Pinch of ground black pepper
  • 3/4 cup granulated monk fruit or allulose sweetener

Steps

  1. 1.Combine the water with the ground cinnamon, ginger, cardamom, cloves, and black pepper in a saucepan. Bring to a boil, then reduce to a simmer for 5 minutes to let the spices bloom.
  2. 2.Remove from heat, drop in the tea bags, cover, and steep for 5 minutes -- longer than that and the tea starts to turn bitter.
  3. 3.Remove and discard the tea bags (or strain out loose tea). Whisk in the monk fruit or allulose sweetener while the liquid is still hot -- sugar-free sweeteners can take a bit longer than sugar to dissolve smoothly.
  4. 4.Let cool completely -- a little spice sediment settling at the bottom is normal.
  5. 5.Store in a sealed jar in the fridge for up to 1 week. Give it a shake before using. Use 4oz per drink, combined roughly 1:1 with steamed milk.

This is the concentrate behind our Sugar-Free Chai Latte – the same method as our Standard concentrate, with a monk fruit or allulose sweetener standing in for cane sugar. Black tea and ground chai spices carry the flavor either way. Like the Standard version, there’s no coffee anywhere in this recipe – it’s espresso-free by design, and a shot of espresso is the only thing that turns it into a dirty chai (see the Sugar-Free Chai Latte for that variant).

The Concentrate

Combine 4 cups water with 1 1/2 tsp ground cinnamon, 1 tsp ground ginger, 1/2 tsp ground cardamom, 1/4 tsp ground cloves, and a pinch of ground black pepper in a saucepan. Bring to a boil, then reduce to a simmer for 5 minutes. Remove from heat, drop in 8 black tea bags, cover, and steep for 5 minutes. Fish out the tea bags, then whisk in 3/4 cup monk fruit or allulose sweetener while the liquid is still hot – it can take a little longer to dissolve than plain sugar, so don’t rush this step. Let it cool completely.

Store the finished concentrate in a sealed jar in the fridge for up to 1 week. It makes about 6 drinks’ worth at 4oz concentrate each.

Sweetener is pricier per cup than plain sugar, which is why this concentrate costs more per serving than the Standard version despite using the same method.

Storage & Shelf Life

  • Keeps about 1 week in a sealed jar in the fridge, same as the Standard concentrate – brewed tea fades faster than a sugar syrup does, sweetener choice doesn’t change that.
  • Give it a shake before using – ground spices settle at the bottom, same as the Standard concentrate.
  • Crystallizing in the fridge? Some sweetener blends crystallize faster than sugar does – gently reheat the jar in a warm water bath to re-dissolve before using.

Sweetener Notes

  • Monk fruit or allulose blends measure roughly cup-for-cup like sugar and behave most like it here – the easiest substitution if this is your first sugar-free concentrate.
  • Stevia works but is far more concentrated – use a fraction of the amount and adjust to taste, since stevia can read as slightly bitter at higher concentrations, especially alongside black tea’s own tannins.

4oz of this concentrate, combined with 4oz of steamed milk, is the Sugar-Free Chai Latte. FAQ

Do I need to make this every time I want a latte?

No – make one batch and it covers about 6 drinks over the course of a week. The Sugar-Free Chai Latte recipe assumes you already have a jar on hand.

Does monk fruit or allulose change the taste?

Slightly – both are close to neutral-sweet with a very mild aftertaste some people notice more than others. The tea and warming spices still carry most of the flavor here.

Can I still make this dirty?
