    Salted Caramel Affogato

The BYOB Team3 min1 serving (from a batch of Salted Caramel Syrup that makes about 12 servings)~$0.75/serving after the syrup batch (~$0.60 one-time for the syrup, makes ~12 servings)205 cal/serving

Uses Salted Caramel Syrup — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

    Ingredients & steps

    Standard

    Ingredients

    • 2 scoops (about 4oz / 1/2 cup) good vanilla ice cream, well-frozen
    • 1 tbsp Salted Caramel Syrup (make a batch ahead of time -- it keeps about 2 weeks in the fridge)
    • 2oz espresso, freshly pulled and hot (or a double shot of strong moka pot coffee)
    • Optional: a small pinch of flaky sea salt on top, to finish

    Steps

    1. 1.Make a batch of Salted Caramel Syrup ahead of time if you haven't already -- it keeps about 2 weeks in the fridge and covers many servings of this.
    2. 2.Scoop the ice cream into a small glass or cup while it's still hard and cold.
    3. 3.Drizzle 1 tbsp of the salted caramel syrup over the ice cream.
    4. 4.Pull a double shot of espresso (about 2oz) and pour it directly over the ice cream and syrup at the table, right before eating.
    5. 5.Finish with a small pinch of flaky sea salt if using, and serve immediately with a small spoon.

This is our Classic Affogato’s technique — hot espresso poured over cold vanilla ice cream at the table — with a drizzle of real Salted Caramel Syrup added before the espresso hits, so the caramel and salt bloom into the ice cream as it melts instead of sitting as a separate layer.

Make the Syrup First (Just Once)

This recipe assumes you already have a jar of Salted Caramel Syrup in the fridge — it’s a 20-minute batch that keeps 2 weeks and covers a lot of servings of this. If you haven’t made a batch yet, go do that first, then come back here.

    The Technique

    1. Scoop 2 scoops (about 4oz) of vanilla ice cream into a small glass or cup, straight from the freezer.
    2. Drizzle 1 tbsp of the salted caramel syrup over the ice cream.
    3. Pull a double shot of espresso (about 2oz) and pour it directly over the top, at the table, right before eating.
    4. Finish with a small pinch of flaky sea salt if you want the extra crunch and contrast, and serve immediately.
Café/Gelateria Flavored Affogato vs. Home Version
    Café or gelateria flavored affogato~$7.00
    Home salted caramel affogato~$0.75
    Savings per serving$6.25

The syrup batch itself is a one-time ~$0.60 and makes about 12 servings’ worth of drizzle — see the full syrup recipe for the batch method. Assumptions: standard supermarket vanilla ice cream, $16/lb specialty beans or equivalent grocery beans, and a flavored-affogato price at the higher end of a typical dessert menu since flavored versions usually cost more than the plain one.

    Swaps & Notes

    • Want it without the salt? See our Classic Affogato for the plain version, or use our regular Caramel Syrup instead of the salted one here.
    • No espresso machine? A moka pot or strong AeroPress shot both work.
    • Prefer chocolate? See our Mocha Affogato for the same technique with real chocolate mocha sauce instead.

    FAQ

Do I use the same salted caramel syrup as your Salted Caramel Latte?

Yes — it’s the exact same Salted Caramel Syrup batch, just drizzled over ice cream instead of stirred into a latte.

Should I stir the syrup and espresso together, or leave it layered?

Leave it layered and let it melt together naturally as you eat — that slow-mixing contrast between hot, cold, sweet, and salty is the actual point of an affogato. Stirring it into a uniform mixture first turns it into more of an affogato-flavored milkshake.

Can I add the flaky salt on top even if I don’t usually finish the latte version with it?

Yes — it’s optional here the same way it is on the latte, and it adds a nice textural crunch against the melting ice cream, but the syrup itself already carries a real salted-caramel flavor without it.
