    Nitro Mocha Cold Brew

The BYOB Team35 min1 drink (from a batch of Mocha Sauce that makes about 12 servings)~$0.99/drink (~$1.30 one-time for the sauce batch, makes ~12 drinks, plus ~$0.45/drink for the nitrogen charge)59 cal/serving

Uses Cold Brew Concentrate (Plain, No Protein) — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

    Ingredients & steps

    Standard

    Ingredients

    • 4oz Cold Brew Concentrate (homemade or store-bought)
    • 4oz cold water (brings the concentrate to drinking strength -- same 1:1 ratio the concentrate recipe itself calls for)
    • 2 tbsp Mocha Sauce (make a batch ahead of time -- keeps about 2 weeks in the fridge)
    • 1 nitrogen charge (one 8g N2 charger in a whipped-cream-style dispenser fitted with a nitro flow-restrictor widget, or the reservoir of a dedicated nitro cold brew maker)
    • Ice, if you want it colder after pouring (optional -- add after, not before, or it disrupts the cascade)

    Steps

    1. 1.Make a batch of Mocha Sauce ahead of time if you haven't already -- it's a once-every-week-or-two step, not a per-drink one.
    2. 2.Combine 4oz cold brew concentrate, 4oz cold water, and 2 tbsp of the sauce in your whipped-cream-style dispenser or the reservoir of your dedicated nitro cold brew maker. Stir well right before charging -- cocoa sauce is denser than a clear syrup and settles toward the bottom if it sits, so mix it through again even if you stirred it in a minute ago.
    3. 3.Charge with one 8g N2 charger per your device's instructions, then shake or invert exactly as its manual says.
    4. 4.Chill in the fridge for at least 30 minutes -- colder liquid holds the nitrogen better and cascades more visibly. Longer is fine if you're prepping ahead.
    5. 5.Dispense slowly into a chilled glass, holding the nozzle close to the glass -- this is what actually creates the cascading, settling foam. Add ice after pouring if you want it colder, not before.
    6. 6.Serve immediately. Nitro's texture is best in the first few minutes after pouring, the same way a nitro stout's head is.

Flavored nitro cold brew tends to lean fruity or floral at most shops that offer it — plain or sweet-cream nitro is far more common than a cocoa version. That’s a little odd given how well it actually works: real cocoa doesn’t fight the cascade or the texture at all, it just adds a second layer of bitterness on top of the coffee’s own, rather than covering it up the way a sweeter syrup would.

A Real Technique Note: Sauce Is Denser Than Syrup

Mocha Sauce isn’t a thin sugar-water syrup — it’s a genuine sauce, cooked down with cocoa powder, and it’s noticeably heavier than the syrups behind our other nitro flavors. Left to sit even briefly after stirring, it starts settling back toward the bottom of the dispenser rather than staying suspended through the liquid. Give it a real stir immediately before you charge, not several minutes before — an unmixed layer of sauce at the bottom can pour out unevenly across your first and last servings if you’re charging a full reservoir at once.

    How This Tastes

This is the least sweet flavor in the nitro lineup, and it tastes like it. Cocoa’s own bitterness stacks with the coffee’s rather than masking it, so where a fruitier or floral syrup softens nitro cold brew’s edge, mocha doubles down on it. If you like your coffee drinks genuinely bittersweet rather than dessert-sweet, this is the flavor built for that — if you want something that reads more like a treat, the Maple Pecan or Pumpkin Spice builds land closer to that.

    The Gear This Actually Requires

You’ll need either a whipped-cream-style dispenser fitted with a nitro-specific flow-restrictor widget, or a dedicated nitro cold brew maker that bundles the charge and restrictor together — a jar and a spoon won’t produce a cascade, the way it works for plain Cold Brew Concentrate. Both routes take 8g N2 chargers. The device itself is a separate cost from the per-drink math below.

Make the Mocha Sauce First (Just Once)

This recipe assumes a jar of Mocha Sauce already in the fridge — a quick stovetop cook that covers about 12 drinks.

    Building the Nitro Cold Brew

    1. Combine 4oz Cold Brew Concentrate, 4oz cold water, and 2 tbsp of the sauce, stirring right before charging so it doesn’t have time to settle.
    2. Charge with one 8g N2 charger per your device’s instructions, then shake or invert exactly as directed.
    3. Chill for at least 30 minutes.
    4. Dispense slowly into a chilled glass, nozzle close to the glass. Add ice after, not before.
    5. Serve immediately — the texture is best in the first few minutes, and it also fades fastest here, the same way a nitro stout’s head settles over 10-15 minutes.
Specialty Café Nitro vs. Home Nitro Mocha Cold Brew
Specialty/boutique café nitro mocha cold brew~$6.50
Home nitro mocha cold brew (concentrate, sauce, nitrogen charge)~$0.99
    Savings per drink$5.51

The sauce batch itself is a one-time ~$1.30, covering about 12 drinks — cocoa powder and sugar, no chocolate bar required. The nitrogen charge adds the usual ~$0.45/drink. Assumptions: cold brew concentrate at grocery-bean pricing, a standard 8g N2 charger, and 12 servings per sauce batch. This isn’t a standardized national-chain item, so $6.50 is a representative specialty-café price. At 5 of these a week over the site’s standard 48-week year (240 drinks), that’s roughly $1,322/year saved versus the café version, on top of whatever the dispenser or nitro maker itself cost.

    Swaps & Notes

    • Want it less bitter? Bump to 3 tbsp of sauce instead of 2 — it still charges the same, just carries more chocolate and sugar.
    • No dispenser or nitro maker? Still a real iced mocha cold brew, just without the cascade or the extra body nitrogen adds.
    • Cascade looking off? If it’s uneven pour to pour rather than flat entirely, that’s usually the sauce settling between charges — see the technique note above.

    FAQ

Why does the sauce need re-stirring right before charging?

Mocha Sauce is a cooked-down cocoa sauce, not a thin syrup — it’s denser and settles toward the bottom of the dispenser faster than our other nitro flavors do. If you stir it in and then wait a few minutes before charging, you can end up with an unevenly flavored pour, especially the last servings out of a full reservoir.

Is this drink actually less sweet than your other nitro flavors?

Yes, genuinely. At about 13g of added sugar per serving from the sauce, it’s on the lower end of the lineup, and cocoa’s bitterness reads more noticeably against nitro cold brew’s own bitterness than a fruitier or floral syrup does. If you want it sweeter, adding an extra tablespoon of sauce is the straightforward fix.

How long does the cascade actually hold once poured?

It fades a little faster here than with our lighter syrup-based flavors, since the denser cocoa sauce settles back out of suspension more quickly than a thin syrup does. Best in the first couple of minutes; still a fine drink after that, just less of a visible cascade.
