    Nitro Buttered Toffee Cold Brew

The BYOB Team35 min1 drink (from a batch of Buttered Toffee Syrup that makes about 12 servings)~$0.97/drink (~$1.05 one-time for the syrup batch, makes ~12 drinks, plus ~$0.45/drink for the nitrogen charge)72 cal/serving

Uses Cold Brew Concentrate (Plain, No Protein) — make a batch ahead of time; it keeps in the fridge for a week or two, so you won't need to make it again for every drink.

    Ingredients & steps

    Standard

    Ingredients

    • 4oz Cold Brew Concentrate (homemade or store-bought)
    • 4oz cold water (brings the concentrate to drinking strength -- same 1:1 ratio the concentrate recipe itself calls for)
    • 2 tbsp Buttered Toffee Syrup (make a batch ahead of time -- keeps about 2 weeks in the fridge)
    • 1 nitrogen charge (one 8g N2 charger in a whipped-cream-style dispenser fitted with a nitro flow-restrictor widget, or the reservoir of a dedicated nitro cold brew maker -- see "The Gear You Actually Need" below)
    • Ice, if you want it colder after pouring (optional -- add after, not before, or it disrupts the cascade)

    Steps

    1. 1.Make a batch of Buttered Toffee Syrup ahead of time if you haven't already -- it's a once-every-couple-weeks step, not a per-drink one.
    2. 2.Combine 4oz cold brew concentrate, 4oz cold water, and 2 tbsp of the syrup in your whipped-cream-style dispenser or the reservoir of your dedicated nitro cold brew maker. Stir or shake gently first so the syrup is fully dissolved -- an undissolved syrup won't distribute evenly once the nitrogen's added.
    3. 3.Charge with one 8g N2 charger per your device's instructions, then shake or invert exactly as its manual says.
    4. 4.Chill in the fridge for at least 30 minutes -- colder liquid holds the nitrogen better and cascades more visibly.
    5. 5.Dispense slowly into a chilled glass, holding the nozzle close to the glass. Add ice after pouring if you want it colder, not before.
    6. 6.Serve immediately. Nitro's texture is best in the first few minutes after pouring, the same way a nitro stout's head is.

Not medical or nutrition advice. Calorie figures on this page are estimates based on typical ingredient values, not a lab analysis of your exact batch — they'll shift with the brand of milk, syrup, or protein powder you actually use. "Ingredient-Honest" and "sugar-free" describe what's in the recipe, not a health claim. If you're managing diabetes, a caffeine sensitivity, pregnancy, or another condition, check with a doctor or dietitian before making a recipe part of your routine. Read the full disclaimer.

Don’t confuse this with the Caramel build a few pages over — the two look similar on a spec sheet (both browned-sugar-adjacent, both dairy-free) but they’re made by completely different methods. Caramel is dry-melted white sugar taken to a deep amber. Buttered Toffee starts from brown sugar and never touches a dry pan at all — it’s simmered in water and finished with a real toffee/butterscotch extract and a pinch of salt, which is what actually pushes the flavor toward candy-toffee territory instead of just tasting like sweetened brown sugar.

    Building the Drink

Have a jar of Buttered Toffee Syrup ready before you start — a 10-minute stovetop batch (dissolve brown sugar in water, stir in extract and salt off the heat) that covers roughly 12 drinks.

    1. Combine 4oz Cold Brew Concentrate, 4oz cold water, and 2 tbsp Buttered Toffee Syrup in your dispenser or nitro maker’s reservoir.
    2. Stir or shake to fully dissolve the syrup — the extract mixes in cleanly, but give it a real shake so the salt doesn’t settle out unevenly.
    3. Charge with one 8g N2 charger, then shake or invert per your device’s instructions.
    4. Chill at least 30 minutes.
    5. Pour slowly into a chilled glass, nozzle close to the glass. Add ice after pouring, not before.
    6. Serve immediately for the best cascade.

    Gear Requirements

This isn’t a no-equipment recipe. You need either a whipped-cream-style dispenser with a nitro-specific flow-restrictor widget attached (the standard whipped-cream head won’t produce a cascade), or a dedicated nitro cold brew maker with the restrictor built in. Both consume 8g N2 chargers sold separately in nitro-labeled packs. If you don’t already own the dispenser or maker, budget for that separately — it’s real money that the per-drink cost below doesn’t include.

    Tasting Notes

The salt is doing more work here than it might seem. Without it, brown sugar syrup alone (our regular Brown Sugar build) reads as pleasantly one-note sweet. Add the extract and salt, and it shifts toward something closer to an actual toffee candy — more complex, with a savory edge that cuts nitro’s natural bitterness better than a plain sugar syrup does. It’s dairy-free, so the cascade stays as tight and crisp as Caramel’s or Brown Sugar’s — unlike our cream-based Butterscotch build, nothing here softens the pour.

Specialty Café Nitro Buttered Toffee vs. Home Version
Specialty/boutique café nitro buttered toffee cold brew~$6.50
Home nitro buttered toffee cold brew (concentrate, syrup, nitrogen charge)~$0.97
    Savings per drink$5.53

The syrup batch runs about $1.05 for 12 drinks — brown sugar plus a small amount of specialty extract, priced at typical grocery rates. Layer in the nitrogen charge (~$0.45/drink) and cold brew concentrate, and the total lands at $0.97/drink versus a representative $6.50 café price for a comparable flavored nitro pour — a $5.53 gap. At 5 drinks a week across a 48-week year, that’s roughly $1,327/year saved, not counting whatever the dispenser or nitro maker itself cost upfront.

    Swaps & Notes

    • Want it saltier, closer to a true salted toffee? Double the salt in the syrup batch — same move the Buttered Toffee Syrup page itself recommends.
    • No dispenser yet? Skip the charge and you’ve still got a solid iced buttered toffee cold brew, just without the cascade.
    • Flat pour, no real foam? Usually a charger that wasn’t fully seated, liquid that wasn’t cold enough, or a plain whipped-cream head standing in for an actual nitro widget.

    FAQ

How is this actually different from your Nitro Caramel Cold Brew?

Caramel is dry-melted white sugar browned to a deep amber — the flavor comes from the caramelization itself. Buttered Toffee is brown sugar simmered in water with a real toffee/butterscotch extract and salt added off the heat — the flavor comes from the extract and salt, not from browning. They land in a similar amber-sweet neighborhood, but the actual flavor mechanism is different, and Buttered Toffee has a saltiness Caramel doesn’t.

Do I need to remake the syrup for every drink?

No. One batch of Buttered Toffee Syrup keeps about 2 weeks refrigerated and covers roughly 12 drinks — this is a make-once, pour-many-times syrup, same as most on the site.

Why does the recipe call for extract instead of real toffee candy?

Melting actual toffee candy into syrup is inconsistent — it seizes unpredictably and the sugar content varies by brand. A measured toffee/butterscotch extract gives a repeatable flavor and cost every batch, which matters for keeping this recipe’s math (and its taste) consistent drink to drink.
