  • 1 cup light amber (Grade A) pure maple syrup
  • 2-3 whole cinnamon sticks
  • 1-2 tbsp warm water, to thin after reducing

Steps

  1. 1.Pour the maple syrup into a small saucepan and add the cinnamon sticks. Bring to a gentle simmer over medium-low heat and let it infuse for 8-10 minutes, swirling occasionally -- it will darken slightly and thicken a little as it reduces.
  2. 2.Remove the cinnamon sticks and discard (or rinse and save for a garnish -- see Swaps & Notes).
  3. 3.Whisk in 1-2 tbsp warm water off the heat to loosen the syrup back to a pourable consistency -- it thickens more than you'd expect as it cools.
  4. 4.Let cool completely -- no vanilla goes into this one (see note below).
  5. 5.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Cinnamon Toast Latte — real maple syrup standing in for granulated sugar, and whole cinnamon sticks slowly steeped in rather than ground cinnamon stirred through. It’s the same technique our Maple Cinnamon Dolce Syrup uses, with two deliberate changes to keep this one tasting like the bright, cereal-adjacent flavor it’s meant to be instead of drifting toward that syrup’s rounder, caramel-adjacent profile.

Why This Recipe Skips the Vanilla

Our Cinnamon Dolce syrups all use vanilla to round out the flavor – it’s a defining ingredient of that family. Cinnamon Toast is built to do the opposite: stay bright and direct, closer to cinnamon-sugar than to a vanilla-cinnamon blend. The Standard and Sugar-Free tiers of this family still use a small 1/4 tsp of vanilla for a little roundness, but at Clean-Ingredient scale, where real maple syrup already brings its own natural sweetness and depth, we found the extract unnecessary and left it out entirely – one fewer ingredient, and the clearest, most direct cinnamon flavor of any tier in this family. We also default to light amber (Grade A) maple here instead of a darker, more robust grade, for the same reason: it keeps the syrup lighter and brighter rather than pushing it toward a deep, molasses-like flavor.

Storage & Shelf Life

  • Thickens more in the fridge than the Standard syrup does — a few seconds in a warm water bath loosens it back up.

Why no vanilla in this tier, when the other two use a little?

Real maple syrup already brings natural sweetness and depth on its own, and this flavor family is built to stay bright rather than rounded out – adding vanilla on top of maple pushed the flavor closer to our Cinnamon Dolce syrups than we wanted. Leaving it out keeps this the most direct, cinnamon-forward version of the three tiers.
