Honey is a traditional gingerbread ingredient, and this is a real, officially-published pairing: Honey.com’s own site publishes a “Burnt Honey Gingerbread Latte,” built from a honey simple syrup blended with the same spices (allspice, cloves, nutmeg, ginger, cinnamon) that define gingerbread. Nate’s Honey and Stumptown Coffee publish their own versions too. This version combines this site’s own Gingerbread Syrup (molasses and brown sugar) with Honey Syrup.
Two Real Bases, Not a New Fused Syrup
This drink combines two syrups this site already has: 1 tbsp Gingerbread Syrup and 1 tbsp Honey Syrup, split evenly — the same pattern this site already uses for Honey Lavender Latte and Cardamom Honey Latte. No new syrup needed.
Building the Latte
- Pull a double shot of espresso (about 2oz) directly into your cup, or brew a strong coffee/moka pot equivalent.
- Stir in 1 tbsp Gingerbread Syrup and 1 tbsp Honey Syrup while the espresso is still hot.
- Steam or froth 8oz of milk to about 150°F and pour it over the espresso mixture.
Assumptions: grande-size flavored latte, chain pricing, dairy milk, $16/lb specialty beans or equivalent grocery beans. At 5 drinks a week over the site’s standard 48-week year, that’s roughly $1,267/year back in your pocket.
Swaps & Notes
- No espresso machine? A moka pot or strong AeroPress shot works fine.
- Want it more gingerbread-forward or more honey-forward? Shift the ratio to 1.5 tbsp of one and 0.5 tbsp of the other.
- Watching sugar? Swap in Sugar-Free Gingerbread Syrup and/or Sugar-Free Honey Syrup 1:1.

FAQ
Is this a real pairing, or did you invent it?
Real — Honey.com’s own official recipe site publishes a Burnt Honey Gingerbread Latte, and both Nate’s Honey and Stumptown Coffee publish their own gingerbread-plus-honey versions.
How is this different from your plain Gingerbread Latte?
The Gingerbread Latte is sweetened entirely by the molasses-and-brown-sugar syrup; this version swaps in real honey for part of the sweetness, which changes the flavor noticeably.
Can I use the sugar-free versions of either base?
Yes — swap in Sugar-Free Gingerbread Syrup and/or Sugar-Free Honey Syrup 1:1; the ratios don’t change.
