  • 1 cup pure maple syrup
  • 2 tbsp molasses (unsulphured)
  • 1 cinnamon stick
  • 4-5 thin coins fresh ginger (or 1/2 tsp ground ginger if fresh isn't on hand)
  • 1/8 tsp ground clove
  • 1/8 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1-2 tbsp warm water, to thin after reducing

Steps

  1. 1.Pour the maple syrup and molasses into a small saucepan and add the cinnamon stick and fresh ginger coins. Bring to a gentle simmer over medium-low heat and let it infuse for 8-10 minutes, swirling occasionally -- it will darken slightly and thicken a little as it reduces.
  2. 2.Remove the cinnamon stick and ginger coins and discard (or rinse and save the cinnamon stick for a garnish -- see Swaps & Notes).
  3. 3.Whisk in the ground clove and nutmeg -- fresh whole versions of these two are impractical to grate evenly at home, so ground is what we use even at this tier.
  4. 4.Whisk in 1-2 tbsp warm water off the heat to loosen the syrup back to a pourable consistency -- it thickens more than you'd expect as it cools.
  5. 5.Stir in the vanilla extract. Let cool completely.
  6. 6.Store in a sealed jar in the fridge for up to 2 weeks. Use 2 tbsp per drink, stirred into hot espresso before adding milk.

This is the syrup behind our Clean-Ingredient Gingerbread Latte — real maple syrup and molasses standing in for the brown sugar our Standard syrup uses, and a whole cinnamon stick and fresh ginger slowly steeped in rather than measured out of a spice jar. Clove and nutmeg stay ground here, same honest exception our Maple Cinnamon Dolce Syrup makes for cinnamon sticks over ground cinnamon – fresh whole clove and nutmeg exist, but grating them evenly at home isn’t a realistic weeknight step, and a small amount of ground spice doesn’t meaningfully change the “clean-ingredient” case here the way refined sugar would.

What “Clean-Ingredient” Means Here

Maple syrup, molasses, fresh ginger, a whole cinnamon stick, a little ground clove and nutmeg, and vanilla extract — ingredients you could read off the label without a dictionary. No dissolved granulated sugar, no gums, no pre-mixed “pumpkin spice”-style blend of unknown ratios. It’s not a “diet” version like our Sugar-Free tier; it’s a rebuilt-from-real-food version, and like our Clean-Ingredient Cinnamon Dolce and Brown Sugar syrups, it isn’t a lower-sugar swap — maple syrup and molasses carry a similar amount of sugar to brown sugar, gram for gram. The upgrade here is ingredient sourcing and a rounder, more complex spice flavor from the fresh infusion, not fewer calories.

Storage & Shelf Life

  • Keeps about 2 weeks in a sealed jar in the fridge — the simmering step here means it keeps as long as the Standard syrup, unlike our no-cook Clean-Ingredient bases.
  • Thickens more in the fridge than the Standard syrup does — a few seconds in a warm water bath loosens it back up.
  • Double the batch if you go through gingerbread lattes quickly — everything scales evenly (2 cups maple syrup, 4 tbsp molasses, 2 cinnamon sticks, double the fresh ginger and ground spices).

Swaps & Notes

  • Save the spent cinnamon stick for a garnish — rinsed and dried, it makes a nice stir stick for the finished latte.
  • No fresh ginger on hand? 1/2 tsp ground ginger, whisked in alongside the clove and nutmeg, works in a pinch – you’ll lose a little of the brighter, sharper ginger note fresh root gives you, but the drink still reads clearly as gingerbread.

Is this actually lower in sugar than the Standard gingerbread syrup?

Why fresh ginger but ground clove and nutmeg?

Fresh ginger has a genuinely brighter, sharper flavor than ground and is easy to slice into coins for steeping. Clove and nutmeg are trickier at home – whole clove would need straining out like tiny nails, and grating whole nutmeg evenly takes a microplane most kitchens don’t have – so we use ground for those two even at this tier, in small enough amounts that it doesn’t undercut the “real ingredients” case.
